I ususally place in boiling water for a few mins and the skins come right off

Boil the kettle, place tomatoes in bowl leave for a few minutes, then the skin should come of easily.
Years ago, my mum used to use a kitchen fork, burn and keep turning the skin on the tomatoes on the gas hob, when they split it causes a popping sound, quite good fun when we were kids, waiting for them to explode, boiling water method is much safer.

drop tomato in boiling water for about 30 seconds. Then the peel will slip right off.

drop the tomato in boiling water for about 30 seconds (longer if it's underripe) then immediately drop into ice water to cool. The skin should slide right off in your hand (but it does work better if you core it first).

if you store them in the freezer then you can peel them before use whenever you need them
