Keep in mind that it is the yolk of the egg that gives the Hollandaise/Bernaise sauce both it's colour and texture. you are gently cooking the egg to make the sauce.
I have never used egg substitute (Call me a purist AND a Certified Chef) so I can't truly say. BUt in traditional cooking, French cooking at that, the texture, colour and possibly flavour will be affected by the substitute.
Stick with real eggs. If it's a healthy eating issue, use less sauce. Remember: portion control! =)

I don't think that would work very well. Isn't egg substitute pre mixed with both the fake white and fake yoke to simulate real eggs? Hollandaise and bernaise require yolk only, so with egg substitute being fake whole egg I don't think you'd get great results.

Yes you can. It's actually healthier for you when you use egg substitutes, but the flavor won't taste the same.
