and that the only reason people die today is because G-d punished them by making them mortal after they ate of the tree of knowledge? why do they believe this, if they do?

yes, genesis is part of the torah, which is why i have read it, and which is why i have no clue why christians would possibly believe adam and eve were immortal, since its my understanding that they believe in genesis too.

That's a good question. I've always believed it and I've read the Bible many times. I think that I was thinking that once they ate from the Tree of Knowledge he also became mortal as part of the punishment and that by eating from the Tree of Life he could prevent that fate. I guess I wasn't thinking clearly on that one.
Re-reading it, it seems clear that they were not immortal. He did say that they would return to the dust (Genesis 3:19), but that was not part of the punishment, it was just part of God's statement.
If they were already immortal, God would not have said in Genesis 3:22, "And the Lord God said, 'The man has now become like one of us, knowing good and evil. He must not be allowed to reach out his hand and take also from the tree of life and eat, and live forever.'"
In other words, man has already gone one step forward towards being like God, knowing good from evil, now he should be prevented from taking the next step, which is living forever.
One of my favorite eye-openers from Genesis, though, has been 3:24. Pictures always show Adam and Eve leaving the Garden with an angel bearing a sword behind them. However, you'll notice that it says there was an angel AND a flaming sword guarding the way. People just read it and assume an angel WITH a flaming sword.
As far as the other verses mentioning death resulting from eating of the tree, it is just as likely that they were referring to spiritual death. I'd like to hear further explanation of 3:22 if it does not mean that they were mortal.

Adam and Eve, the first human beings, were not immortal. One who is immortal CAN NOT die. One cannot be changed to mortal, or they would not have been immortal in the first place.
Adam and Eve had to eat and drink to stay alive, but had they not disobeyed Jehovah they would never have had to have died.
Jehovah warned them ahead of time of the consequences of disobeying him, but he at the same time granted them the opportunity to show their love and loyalty to him by remaining obedient to him.

Yes, because before they sinned by eating from the tree of knowledge (the one and only restriction he gave them), they would have lived forever with God's greatest blessing. However, after they disobeyed, they now had a sin nature and that could could be tolerated by a holy God in an eternal world. Now, by God providing a Savior through the shedding of blood, we now can be reinstated after we die into eternal life with God.

Yes, they were in the spirit form while in the garden.
But when our father Adam, and Eve, went out of the garden, they walked the ground on their feet, not knowing they were walking.
Apparently they floated in the air before being cast out.
For that now their bodies had strange functions; and all flesh that requires food and drink for its existence, cannot be in the garden.
But they became sick from the food they had eaten because they were not used to it, so they went about in the cave saying to each other: --
"What has our eating caused to happen to us, that we should be in such pain? We are in misery, we shall die! It would have been better for us to have died keeping our bodies pure than to have eaten and defiled them with food."

That is 1000 years!
If they did not sin, we also would live 1 day!
The punishment for there sin is, pain in child birth, and man will eat be the sweat of his brow!
