All fish caught on modern trawlers are gutted,cleaned and packed in ice before arriving at market to be sold to the major producers.Fish contains a lot salt when just caught which keeps it fresh and also stops it freezing solid so it can be processed into any shape required.

That's a good question and i'm soo glad you asked it ;)
The people who catch the fish have a large tank of ice they put the fish in and when they get to port they are transferred to a freezer truck... Then at the fish finger factory they are kept frozen but the machines that they use to skin,gut and cut the fish have heated blades... Then they are put back in the freezer until they are coated with... The coating? lol.. Then back in the freezer and deliver to all the shops in a freezer truck and at the shops they are put straight into the freezers until you buy them... Hope that clears things up for you :)

The fish is skinned, boned and frozen in blocks which is taken to the factory cut with a band saw to size for whatever meal it's to be used for .

That is a very valid point if they genuinely keep it frozen then the mincer has to be strong and so do cutting equipment.The coating must be helped by rolling fish in flour.

It is done on a factory ship, they catch, gut, form the fish into slabs and freeze it on board ship. the fish in fish fingers is usually the poorer quality pieces that are no good for anything else

they have industrial machinery that can churn the frozen fish which is mixed with other ingredients in a huge vat and to what goes into fish fingers
