BUTTERSCOTCH COOKIES AND FROSTING

2/3 c. butter
1 1/2 c. brown sugar
2 eggs
1 tsp. vanilla
1 tbsp. vinegar
1 c. evaporated milk
2 1/2 c. sifted flour
1 tsp. soda
1/2 tsp. baking soda
1/2 tsp. salt
1 c. chopped nuts

Cream butter and brown sugar until light and fluffy. Add eggs and beat well. Add vanilla and vinegar to evaporated milk. Sift dry ingredients and add alternately with milk to creamed mixture. Mix well. Stir in nuts. Bake at 350 degrees for 15 minutes.

FROSTING FOR BUTTERSCOTCH COOKIES:

1/2 c. butter
3 c. powdered sugar
1/4 c. boiling water

Cook 1/2 cup butter over medium heat until it stops bubbling and turns golden brown. Add 3 cups confectioners' sugar, then slowly stir in 1/4 cup boiling water. Beat until it holds shape. Decorate with whole nut if desired.

We used to take these cam[ping all the time and dip them in hot chocolate. They are really great cookies.

Butterscotch Oatmeal Cookies

2 1/2 cups sugar
2 1/2 cups brown sugar
2 1/2 cups shortening
6 eggs
2 tsp. vanilla
1/4 cup milk
Blend these ingredients together thoroughly then add:
5 cups flour
2 1/2 tsp. baking soda
2 1/2 tsp. Baking powder
2 1/2 tsp. salt
Mix well and then add
5 cups quick or regular oats.

Bake at 350 for about 10-12 minutes or till crispy brown.

Makes about 12 dozen 2 1/2 inch cookies

Here's a couple really yummy recipes I tried last fall :)

Butterscotch Chocolate Peanut cookies

1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup unsalted butter, room temperature
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1 egg
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (6-ounce package) butterscotch morsels
Granulated sugar, for tops of cookies
Chocolate sauce, for dipping
Preheat oven to 375 degrees F.
In a large bowl, combine sugar, brown sugar and butter. Beat with an electric hand mixer until fluffy. Add the peanut butter, vanilla and egg, blend well. Add the flour, baking soda and salt to dough mixture and mix well. With a wooden spoon or rubber spatula, stir in butterscotch chips. Take small dollops of dough and shape, with your hands, into 1-inch balls. Place 2 inches apart on a cookie sheets. Make sure that the cookies are at leat 2 inches apart from each other because they will spread. Dip a fork into sugar and flatten the balls lightly with the fork in a crisscross pattern. Bake cookies for 6 to 9 minutes, or until golden brown. Remove cookies from cookie sheet immediately and place on wire racks to cool thoroughly. After cookies have cooled, dip in chocolate sauce.

Oatmeal Butterscotch Cookies

INGREDIENTS:
3/4 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups rolled oats
1 2/3 cups butterscotch chips
DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl beat the butter or margarine, white sugar and brown sugar together. Add the eggs and vanilla, beating well.
Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown.

Title: NO BAKE BUTTERSCOTCH COOKIES
Categories: Cookies
Yield: 24 servings

1 pk Butterscotch morsels
3/4 c Peanut butter
4 c Corn flakes
1 c Peanuts

Melt over LOW heat, 1 pk butterstoch morsels and 3/4 c
peanut butter. In another bowl, mix together 4 c.
corn flakes and 1 c. peanuts. Pour melted mixture
over the dry mixture. Mix until covered evenly. Drop
by teaspoon onto cookie sheet lined with wax paper.
Refrigerate until firm.

ONE BOWL Super Chunk Cookies
Makes: About 2 dozen cookies
1 pkg. Butterscotch chips
1/2 cup (1 stick) butter or margarine, softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 egg
1 tsp. vanilla
1 cup flour
1 cup quick-cooking oats
1/2 tsp. baking soda
1/2 cup chopped PLANTERS Pecans (optional)

PREHEAT oven to 375°F. BEAT butter, sugars, egg and vanilla in large bowl with electric mixer on medium speed 1 minute. Add flour, oats and baking soda; beat on low speed until well blended. Stir in butterscotch chips and pecans.
DROP rounded tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
BAKE 10 minutes or until lightly browned. Cool on baking sheets 2 minutes; transfer to wire racks. Cool completely.
