Blueberry Sour Cream Torte

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 cup butter
1 large egg
1 teaspoon vanilla extract
4 cups blueberries
2 cups sour cream
2 large egg yolks
1/2 cup granulated sugar
1 teaspoon vanilla extract
In a bowl combine 1 1/2 cups flour, 1/2 cup sugar, and 1 1/2 teaspoon baking powder. Cut in 1/4 pound butter until crumbly. Add 1 egg and 1 teaspoon vanilla; mix well. Press over the bottom of a buttered springform pan.
Spread 4 cups blueberries on top of crust. In a bowl mix until smooth 2 cups sour cream, 2 egg yolks, 1/2 cup sugar, and 1 teaspoon vanilla. Pour over the blueberries. Place on the center rack in a 350°F (175°C) oven. Bake for 1 hour, or until the edge is light brown. Cool on a wire rack before remove the sides of the pan.
Makes 8 servings.


Pumpkin Cheesecake Torte

1 1/2 cups graham cracker crumbs
1/2 cup butter, melted
Vegetable cooking spray
12 ounces cream cheese, softened
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
3/4 cup granulated sugar
1 (16-ounce) can pumpkin
1/2 cup milk
1 teaspoon ground cinnamon
In a medium bowl, combine together graham cracker crumbs and melted butter. Spray a 13 x 9-inch baking dish with vegetable cooking spray. Press the crumb mixture onto the bottom of the dish. Set aside.
In a mixing bowl cream together softened cream cheese, 2 eggs, 1/2 cup sugar, and vanilla and beat until smooth and blended. Pour the mixture over the crust and bake in a 350°F (175°C) oven for 15 minutes.
Meanwhile, in another medium bowl, stir together 3 eggs, 3/4 cup sugar, pumpkin, milk, and cinnamon until well blended. Carefully spoon the pumpkin mixture evenly over the cream cheese layer; smooth the top. Return to oven and bake for an additional 40 to 45 minutes, or until the center is set. Cool then chill for about 1 hours.
Makes 16 servings.

X-Treme Chocolate Double-Nut Caramel Ladyfinger Torte
1 1⁄2 cups semisweet chocolate morsels
2 (3-ounce) packages ladyfingers
1 (13-ounce) jar hazelnut spread
20 individually wrapped caramel candies
2 1⁄3 cups whipping cream
1 1⁄2 cups chopped pecans
1⁄3 cup confectioners' sugar plus 2 tablespoons
1 (8-ounce) package cream cheese, softened
2 tablespoons crème de cacao
3 (1-ounce) semisweet chocolate baking squares

Microwave chocolate morsels on high for 90 seconds or until melted, stirring at 30 second intervals; cool 5 minutes, and set aside.
Split ladyfingers, and stand halves around edge of a 9-inch springform pan, placing rounded sides against pan; line bottom of pan with remaining halves. Reserve remaining ladyfingers for another use. Spread hazelnut spread evenly over ladyfingers on bottom of pan.
Cook caramels and 1⁄3 cup whipping cream in a medium saucepan over low heat, stirring constantly, just until melted. Stir in pecans until coated; spoon caramel mixture evenly over hazelnut spread.
Beat 1⁄3 cup confectioners' sugar and cream cheese in a medium bowl at medium speed with an electric mixer until fluffy. Add crème de cacao; beat until blended. Beat in melted morsels until blended.
Beat remaining 2 cups whipping cream in a medium bowl at medium speed with an electric mixer until stiff; fold into cream cheese mixture, and spoon evenly over caramel layer in pan.
Shave baking squares with a vegetable peeler evenly on top. Sprinkle evenly with 2 tablespoons confectioners' sugar. Chill 1 hour before serving.

Mmmm, I love tortes. Here's a couple that are super yummy

Almond and Raspberry Torte

2 cups raspberries or pitted cherries
1 cup flour
11/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter
3/4 cup granulated sugar
1 egg
11/4 cups ground almonds
Confectioners' sugar, for sprinkling
Butter the cake pan, line the base with waxed or parchment paper, and then butter and flour it. Wash the raspberries, dry them on paper towels, and then snip off the blossom ends and stems. Sift together the flour, baking powder and salt. Heat the oven to 350 degrees. Cream the butter until smooth in an electric mixer. Add the sugar and continue to beat until soft and light, 2 to 3 minutes. Beat in the egg until well mixed, about 1 minute. Stir in the ground almonds by hand, followed by the flour mixture. Expect the batter to be quite stiff. Spread half the batter in the cake pan. Sprinkle the fruit on top and dot with the remaining batter so the fruit is almost covered. Bake until the torte starts to shrink from the sides of the pan and the top is firm when lightly pressed with a fingertip, 45 to 55 minutes. The top will be rustic looking, like a crumble. Let the torte cool for 10 to 15 minutes in the pan, then loosen the sides and slide the torte onto a rack to cool completely. Sprinkle it with confectioners' sugar and serve it warm or at room temperature.

Chocolate Hazelnut Torte

2 tablespoons unsalted butter, room temperature
2 cups chopped hazelnuts
5 eggs
3 (3.9-ounce) packages chocolate fudge pudding mix
1/2 cup butter, melted and cooled slightly
Cocoa powder and powdered sugar
Preheat the oven to 325 degrees F.
Coat bottom and bottom inch of sides of a 10-inch spring-form pan with softened butter. Layer 1 cup chopped hazelnuts on bottom of pan. In food processor or blender, combine remaining 1 cup hazelnuts, eggs, pudding mix, and melted butter. Process until well-mixed and nuts are ground fine. Pour into prepared pan. Bake about 20 minutes or until edges of torte are firm but center jiggles when pan is shaken. Remove from oven and cool 10 minutes. Release pan sides. Cool to lukewarm then transfer to serving plate and dust with cocoa powder and powdered sugar. Serve at warm or at room temperature.

Blueberry and Pear Torte

Basic Sweet Pie Crust:
1 1/2 cups plus 2 tablespoons all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
8 tablespoons unsalted butter, cut into 1/4-inch pieces and chilled
2 tablespoons vegetable shortening, chilled
3 tablespoons ice water, or as needed
Torte:
2 tablespoons butter
2 pounds (about 4) Bosc pears, peeled, cored and thinly sliced
1/4 cup granulated sugar
1 teaspoon lemon zest
1 teaspoon cinnamon
1 tablespoon lemon juice
1 tablespoon water
2 tablespoons cornstarch
Pinch salt

White Chocolate Ice Cream:
3 cups heavy cream
1 cup milk, plus 1 cup
1 vanilla bean
12 large egg yolks
1 cup sugar
1/2 cup white chocolate

For the pie crust: Sift the flour, sugar and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, or use a pastry blender, until the mixture resembles coarse crumbs.
One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to over mix. Shape into a smooth ball, flatten into a disc, and wrap in plastic wrap. Refrigerate for at least 30 minutes, and up to 2 days.

Roll out the dough on a lightly floured surface to a 10 to 12-inch round that is 1/8-inch thick. Transfer the dough to a 9-inch pie pan. Trim off any overhanging dough to make a 1/2-inch wide overhang. Flute the edges of the dough with your fingertips.

Preheat the oven to 400 degrees F.

Line the pastry with parchment paper and fill with pie weights or dried beans. Bake until the crust is set, about 12 minutes. Remove the paper and weights and bake until golden brown, about 8 minutes. Remove from the oven and allow to cool.

Preheat the oven to 375 degrees F.

Place a large 12-inch saute pan over medium-high heat and melt the butter. Once the butter has melted, add the pear slices to the pan, add the sugar, lemon zest, and cinnamon to the pan and saute with the pears.

Make a slurry using the lemon juice-water and cornstarch, add this to the saute pan and cook for 3 minutes longer. Toss to blend, season with the salt, and remove from the heat. Add the blueberries to the pan and stir to blend. Place the fruit filling in the piecrust and place the tart in the oven. Bake the tart for 30 minutes and remove. Let cool for 15 minutes or longer.

For the ice cream: Combine the cream and 1 cup of the milk in a large heavy saucepan. Bring to a gentle boil over medium heat. Scrape the vanilla bean seeds into the cream mixture and add the bean pod. Whisk the yolks and sugar in a medium bowl. In a slow and steady stream, whisk 1 cup of the hot cream mixture into the egg mixture. Gradually whisk the egg mixture back into the saucepan. Add the white chocolate to the custard, and stir constantly over medium-low heat until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F on an instant-read thermometer, about 5 minutes.

Strain the custard through a fine- mesh sieve into a heatproof medium bowl. Stir in the remaining 1 cup milk into the ice cream base and cover with plastic wrap, press the wrap against the surface of the custard to prevent a skin from forming. Refrigerate until well chilled, at least 2 hours.

Pour the chilled custard into an ice cream machine. Churn according to the manufacturers' instructions. Pack into an airtight container and freeze until ready to serve.

Serve the torte with the white chocolate ice cream. Garnish with blueberries, mint and powdered sugar.
