How long does divinity stay fresh? I am entering a contest on Saturday and want to make it earlier if possible. Is it like fudge and taste better the next day or does it need to be made sameday?

My husband makes divinity at Christmas and keeps it in a tightly sealed jar or container and it is still good in February and March.
If you expose it to the air it gets hard.

it is better than fudge
try this make it ahead of time and see for your self every recipe as well as every batch is different so make some each day and on Saturday take the best batch.

2 1/2 c Sugar
1/2 c Water
1/2 c Light corn syrup
2 Egg whites
1 ts Vanilla extract
1 c Chopped pecans

Recipe by: Southern Living
Preparation Time: 0:20
Combine sugar, water, and corn syrup in a 3-quart saucepan;
cook over low heat, stirring gently, until sugar dissolves.
Cover and cook over medium heat 2 to 3 minutes to wash
down sugar crystals from sides of pan. Uncover and cook
over medium heat, without stirring, to hard ball stage (260
degrees). Remove from heat. Beat egg whites in a large
mixing bowl until stiff peaks form. Pour hot sugar mixture
in a very thin stream over egg whites while beating
constantly at high speed of an electric mixer. Add
vanilla, and continue beating just until mixture holds its
shape (3 to 4 minutes). Stir in pecans. Drop by rounded
teaspoonfuls onto wax paper. Let cool. Yield: about 6
dozen.

I imagine it'll keep fresh as long as it's VERY tightly covered, with all the air removed. If it's humid where you live, the candy may be affected by the moisture in the air. if I were you, I'd wait until Friday (at the earliest) to make it.

Have you ever made divinity before? If not--good luck...

Use a stand mixer if you have one. It's nearly impossible to make it with a hand mixer. It'll more than likely overheat before you're finished whipping it.
