Depending on which state you live in the laws may be different, but here are the average rules.
Turn it in to the police. They will take your name and contact information. If someone lost it and reports it they will be required to fully describe it and may need to produce proof, so no 'false' person can claim it.
After 30 days you need to call the place you took it. (Usually they will give you a specific number to reference about the ring). Do not count on the police calling you since they are usually too busy.
If no one has claimed it after that time they usually turn it back over to the finder.
If you take it to a pawn shop before that you need to keep in mind that 'Lost' items of value are also reported to pawn shops so that they can keep an eye out for them. If you try to sell it before making a reasonable effort to find the owner you could face legal problems.

Been there done that... I am now the proud new owner of a multy thousand dollar diamond ring!
Found it on vacation so boo hoo for the person who lost it !
You may sell it or keep it... but try to find the owner first if you can!

Many diamonds have a tiny code inscribed somewhere, if you try to sell it you could get "bagged". You should put an ad in the paper or contact the Police Department to see if anyone lost it.
If there is no response, then after a time you can keep it.

Get a good cutter and cut the diamond out from the gold setting. Sell the diamond or get it re-set for your own use. Sell the gold to another jeweller.

You can sell, chances are if you try to report it lost or stolen some false person is going to claim it.
If it's a good diamond like a VVS or a flawless stone, it's probably certified, meaning the diamond manufacturer knows the real owner. I think it's called a GLI A certificate. thats only if its certified...
you may have to pay to get it appraised

once while i was in highschool, i found a ring in the girls bathroom. I thought about keeping it but my better judgement took over and i gave it to the security guards. About a week later while i was in class, the guard stepped into the room with a poor looking girl and she thanked me for finding her ring.
I honestly did not even want the ring and that was the best feeling in the world.

First try and find the owner by putting a ad in your local paper in lost and found but give very little info. If no one responds then do what you want with it. If no one claims it take it to a jeweler and have it appraised it maybe worth more then you know or not.

the moral thing to do is to take it to the police, If it goes unclaimed, you might get it back after awhile, But it could be very special to someone who misses it dearly ie.. an engagement ring, family heirloom, besides why mess with the bad karma that would come along by not doing the right thing.

Morally I think you have a duty to find the owner, legally I think it is finders keepers unless it is treasure trove (which belongs to the government ) or stolen property.
If you search diligently for the owner and no one claims it, i think you can sell it
