Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them.

I always enjoy carbonara, certainly, nachos or salad. There's a pub near me that does irresistable bar food, they do a great version of chili nachos where you get a pile of tortilla chips, a heap of beef chili in the middle, lots of cheese melted on top with salad leaves, coleslaw, a carrot & orange salad or something similar, all together it's so yum and I've started making it at home now. I've found that grilling the nachos, chili and cheese for a couple of minutes makes it all melt nicely together, the uppermost nachos go more crunchy and the ones underneath soak up the cheese, uh, goreous. I use Tesco's lightly saled tortilla chips and they work fine.

This pub also do a really great salad (I can hardly ever be persuaded to eat salad so it must be good). I usually choose a warm chicken salad with lots of interesting salad leaves (including rocket, most important to me), warm grilled chicken breast, pieces of blue cheese, croutons and warm new potatoes - heaven.

Another pub nearby does carbonara and I can't resist that, though ham, egg and chips is a family favourite there too. Whatever you offer, there needs to be a mixture of traditional (pies, steaks, etc) and a few different things (fish, pasta, salads) to appeal to everyone, it all needs to be really excellently presented with something quirky about it to make it different from the competition (like unusual accompaniments), it needs to be reasonably priced and never out of a packet! You need to have fun making it too, the fun will be evident in the food you cook.

Here in Texas the bars serve Menudo soup because it cures a hangover. I wouldn't touch the stuff but, I think it's so funny to "cure the hangover" so ya can drink more all over again. Crazy! Honky Tonks!
Now, if I was going to a nice place to eat that had a bar I would step it up a bit and order broiled crab stuffed butterfly shrimp, or lobster/steak tenderloin, or coconut fried shrimp or a small ribeye steak, all served with homemade soup/salad bar. Fish is a must on the menu but, I personally don't order it because I am spoiled...(my name?). Prime Rib is a must, too, although I've never tried it. Men like that.
I like to have pleanty of time to drink before I eat and not be rushed by the staff wether I am standing at the bar with friends and our "table is ready" so, we gotta go go go now, or if I am already seated at the table having drinks with friends and the wait person "is ready for us to order now". I don't like that. It affects the huge tip I am about to leave...I start subtracting. I get full after soup/salad and usually take my food to go. Once I eat, that's it, I'm going home...bye bye, nite nite.
I hope this is of help as I wasn't quite sure which atmosphere of bar you are talking about.

A bail of hay would be fine for some folk by the size of their guts
hanging on top of the bar whilst ime trying to get served.Failing that a Corn beef sarnie and when j pick my self up from the floor
after she asked six quid or more for it i would have to go home cos i am skint.

lwell, my old standby...wings and things like blu cheese and celery sticks. If it's really late (or early in the AM) steak and eggs and Irish coffee.
PS...one of the great things about these Q&A's, is all the differant Countries that respond...I'd love to know what some of the interesting foods you speak of are? I'm going to sign off from now on by State & Country...Florida...USA...no hate mail please; I already know...

Can't beat the simplest stuff.
A nice big juicy steak (I prefer it brown all the way through) coated in black pepper sauce with a light side-salad and a generous helping of thick cut chips.

Take a loaf of uncut bread, slice the top on & spoon out the bread. Cook a curry (beans are traditional) & pour inside...yummy, a Durban treat!
