Why not real kedgeree? Poach the haddock in half water/ half milk mixture which just covers the fish. Meanwhile cook some rice till al dente. When the fish is cooked flake it. Take the rice, rinse it, add a good generous slug of cream an enormous dollop of butter, some of your favorite curry powder, a chopped hard boiled egg and some peas and the flaked fish and warm it in the oven. If it looks like its going to dry up, add more cream/butter, or for a more healthy version some of the cooking liquid from the fish. Ta da. A favorite Victorian recipe.

Gary Rhodes has one of the best recipes for smoked haddock.
First prepare a cold sliced tomato salad with a lemon juice and olive oil dressing. Cook the haddock in the oven, then cover it in a welsh rarebit and put under a hot grill until the cheese bubbles.
Serve on the top of the tomato salad.

Try poaching it in milk, with chopped shalots, garlic, salt & pepper and a little butter. You'll just need a big saucepan so the fish is almost covered. About 8 mins simmer should do, or just when the haddock goes flakey. Serve with a bit of the poach juice on top, and some Charlotte potatoes and brocolli. Yum - one of my favourites!

Cook the haddock in milk and use the flavoured milk to make lovely creamy mash, some peas or green beans will finish it off nicely.

try it cooked in white sause with a layer of leeks on top, then mustard mash. and throw somehard boiled egg in with the fish and sauce. yummy
