Im a veggie and havent cooked meat for ages. I cooked some chops yesterday, quite pricey and they turned out horrible meat was really tough and I had a few complaints, ungrateful so and so's. I want to get it right next time, so when they cut them the knife goes through like butter, not an old leather shoe.....any serious suggestions appreciated.

Just quickly grill them.

They only need a minute or so each side, depending on thicknesss - the meat should still be pink

However, as you are not an experienced meat cook can I suggest a shoulder of lamb rather than chops.

You can then simply roast it in the oven and carve it before serving, it is much more forgiving than chops so if you slightly over cook you will get away with it.

Simply put rosemary sprigs into the fat, rub it with salt & pepper, maybe a bit of mint jelly, and put in a hot oven. Once you can smell it cooking turn the meat down and leave on a low heat while you prepare the rest of the meal (or roast veggies - potatoes, mushrooms, peppers, small onions, garlic cloves(unpeeled) with the meat) and serve with a gravy made from the meat juices.

ALWAYS let meat rest before serving it though, to let the juices be reabsorbed into the centre of the meat

Crockpot Lamb Chops




1 medium onion, sliced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground black pepper
8 lamb loin chops
2 cloves garlic, minced


Place onion in a crockpot.
Combine oregano, thyme, garlic powder, salt,and pepper; rub over the lamb chops.
Place chops over onion.
Top with garlic.
Cover and cook on low for 4 to 6 hours or until the meat is tender.

As with any meat the slower and longer you cook the softer the meat is. my advise would be to cook lamb chops in the oven in an oven dish with a little bit of water at the bottom, sprinkeld with salt and pepper and mint glaze, put on a low heat for about half an hour to three quarters.

I use a George Forman Grill. And lamb chops should be slightly pink.

Over cooking makes them tough

After rubbing them with seasonings the trick is to cook them for a short time over high heat. Take them off the heat while they are still pink inside. Anything other than that temperature and time gets the results you have seen.

You probably overcooked them. Just season them put in the broiler for about a minute on each side and the inside should still be pink too. They cook very quickly so be careful.

braise them with potatoes and carrots and onions. irish stew or lancashire hot pot. lamb chops ar,nt what they used to be. cooking them this way will ensure they are tender and succulent.

buy good quality of meat, you may grill them or fry in a non-stick-pan alternatively you may season with meat tenderizer
