Enchiladas

1 pound pre-grated cheese.
1 Can prepared Enchilada Sauce Red or Green
1 One onion chopped
1 Large can of Sliced Black Olives (If you want)
1 9x11 Cake pan (metal or glass)
1 package of corn or flour tortillas

Pre-heat oven to 375. Spoon some sauce into bottom of cake pan to cover. Cover sauce with tortillas one layer only. Cover tortillas with sauce, cheese, onions, black olives, continue in this fashion layering all ingredients until pain is full.
Bake in oven covered, for 35-40 Min's. Remove cover and allow to brown for 6Min's. Serve with ingredients below.

1 package of prepared Salad
1 Package of Cherry Tomatoes
1 Microwaveable tub of Spanish Rice( Found in the refrigerated section of your local market)

Put Salad on Center of plate! Place a nice square of Baked Enchiladas on top of greens. Place Halved Tomatoes strategically for color. Spoon heated Rice on edge of greens and serve.

Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them

get a chicken, season the skin with salt, pepper and drizzle with some oil. Roast in the oven according to size, ensure this is cooked all the way through. When the chicken has around 45 minutes left on the timer, cut some potatoes or sweet potatoes into chunks, drizzle with oil and season, then roast in a roasting tray along side the chicken (you can use the same roasting tray or a clean one if you wish) The serve with gravy and peas. This obviously depends on what you and/or your family really likes to eat. A sure-fire quick and simple recipe we use at home is this:

Version 1:
1 pound ground hamburger (or turkey) browned
1 medium onion chopped and cooked with meat.
1 can of diced tomatoes
1 cup of rice
1 can of water
salt and pepper to taste

Brown meat and onions. Add tomatoes and can of water, salt and pepper. Bring to a boil. Add rice, stirring until boiling. Reduce heat to simmer and simmer for 20 minutes. Serve! Makes 4 - 6 servings.

You can use the same recipe except using macaroni instead of rice. If you use macaroni, boil it separately and do not add the can of water. just cook everything separately and mix together.

1. Fry some Bacon
2. Cut up some Cheese, tomatos, gherkins or olives
3. Smear Mayo and other favs onto wraps (under £1 for six, round thing made of dough-can get at Sainsbury's, tescos)
4. Stick some salad onto the wraps and all the other ingredients, wrap it up and voila!

Cook pasta in a tin of chopped tomatoes and 3/4 pint of water. Add tomato puree, basil, a splash of Worcestershire sauce, a tin of sweetcorn and a tin of tuna. When the pasta is cooked, put it in a big dish, sprinkle crushed up crisps over it and grated cheese and heat under the grill until the cheese melts. Takes about 15 minutes and tastes wicked!

Any variety of Hamburger Helper. These are one dish meals and most take only 20 to 25 minutes to cook. I add Lawry's Seasoning Salt and Accent to the hamburger as it fries.
There are Chicken and Tuna Helpers which might suit your taste buds. But, I like the Hamburger Helper better. You can have side vegetables with these meals, but why go to the trouble when they are a meal by themselves.

This is my favorite: INGREDIENTS:
1 cup uncooked white rice
1 (10.75 ounce) can condensed cream of chicken soup
1 7/8 cups water
1 (1 ounce) package dry onion soup mix
4 skinless, boneless chicken breast halves
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Spread rice in the bottom of a 9x13 inch baking dish. Rinse chicken and pat dry; arrange chicken pieces on top of rice.
Mix soup and water together and pour over chicken and rice. Sprinkle dry onion soup mix on top. Cover and seal TIGHTLY with foil. Bake in the preheated oven for 1 to 1 1/2 hours. Enjoy!

well if you really cant be bothered bung a pizza in the oven or buy a quiche and serve with some pre packed salad,if you're wanting to cook what about popping some steak under the grill brushed with dijon mustard served with corn on the cob and potato wedges or even pasta and garlic bread

chickpea and chorizo stew
fry off 1 clove garlic with 1 diced onion
chop a small chorizo into cubes and fry with it
add 2 tin of chickpeas
add half a jar of pasata
serves 2 hungry or 4 decent
