Chili Con Carne

Easy, delicious chili. The cooking time can be stretched to a couple hours or put in the crockpot. Serve with shredded cheese and corn bread. Perfect for chilly fall evenings!



4 servings 1 hour 10 min prep
Change to: servings US Metric
1 1/2 lbs ground beef
2 (15 ounce) cans tomato sauce
1 (15 ounce) can kidney beans
1 cup chopped onions
1 cup chopped green peppers
2-6 tablespoons chili powder


Saute ground beef, onions and green pepper until no pink remains in the ground beef.
Drain.
Mix beef mixture and tomato sauce in a large pot, cover and cook over medium low heat for 25 minutes.
Add kidney beans (do not drain) and cook uncovered for 25 minutes or until ready to eat.

This recipe always works for me. Amounts depend on how much you want to make.

2 pounds ground beef

1 bag dry red kidney beans

1 large onion, chopped

3 cloves garlic, minced or run through a garlic press

2 large cans whole tomatoes (or about 8 medium fresh tomatoes)

about 2-3 tablespoons brown sugar

chili powder, salt and pepper to taste

The night before - soak kidney beans. In the morning, drain and rinse beans and put on to cook just like it says on the package. When they are almost fork tender, start browning ground beef, with onion and garlic. Add beef mixture to kidney beans, along with all other ingredients. Bring to a boil, then turn down to low and cook for at least 2 hours, adding a little water as necessary (I cook all day). You can add more or less water depending on how thick you want your chili. The longer it simmers, the better it seems to be.

2 tbsp olive oil
2 onions, chopped
2 garlic cloves, crushed
1kg/2¼lb lean minced beef
2 glasses red wine
2x400g cans chopped tomatoes
3 tbsp tomato purée
2 red chillies, thinly sliced, or 3-4 tsp dried chilli flakes
1 tsp ground cumin
1 tsp ground coriander
1 stick cinnamon
good shake of Worcestershire sauce
1 beef stock cube
salt and freshly ground black pepper
2x400g can red kidney beans, drained




Directions

1. Heat the oil in a large, heavy-based saucepan and fry the onion and garlic until softened. Increase the heat and add the mince, cooking quickly until browned and breaking down any chunks of meat with a wooden spoon. Pour in the red wine and boil for 2-3 minutes.

2. Stir in the tinned tomatoes, tomato purée, fresh chilli or chilli flakes, cumin, ground coriander, cinnamon, and Worcestershire sauce and crumble in the stock cube.

3. Season well with salt and pepper. Bring to a simmer, cover with a lid and cook over a gentle heat for about 50 minutes to 1 hour, stirring occasionally until the mixture is rich and thickened.

4. Add the kidney beans and fresh coriander. Cook for a further 10 minutes, uncovered, before removing from the heat, adding any extra seasoning if necessary. Serve with rice, tortialla chips or a green salad.

Onions, gently fried. not browned, add chilis, this is difficult because chilis vary in hotness. If you're unsure de-seed them, a couple of cloves of chopped garlic. Add minced beef and brown . Add tomato puree and either tinned or chopped tomatoes. You¨ll also need a can of red beans, or if you're really into doing your own thing, take dried red beans and soak over night before adding to the meat. Season with salt and pepper add stock or water and beefstock cube and simmer gently.
If you want the chili flavour without the burning sensation cook the day before and re-heat.
Before serving add a good handful of coriander, or if you don't like the flavour you can use flat-leafed parsley. Garnish with slices of lime and serve with tortillas or boiled rice.

Chili Con Carne

A quick and easy to make chili that is flavored with onion and green pepper. A great fall dish.

Ingredients:
• 1 Onion; chopped
• 1 Green pepper; chopped
• Fresh garlic or garlic powder to taste
• 1 Lb. hamburger
• 1 large can baked kidney beans
• 1 large can tomato sauce
• 1 tsp. salt
• 2 tsp. chili powder or to taste

Method:
Saute first three ingredients in oil until soft. Add hamburger; cook until redness is gone. Add rest of ingredients. Simmer 1/2 hour.

Notes:
This recipe is not as hot as Chili, but very warm and tasty.

Number of servings: 6-8

My Easy, Quick and Tasty Chilli!

Fry off some lean mince in olive oil.

Once brown add finely chopped onion and garlic.

Add in a teaspoon of cumin powder and either fresh chopped chilli or chilli flakes (add to taste!).

Fry for about 5 mins, then add fresh chopped tomatoes, some dried oregano and salt and pepper. Again, fry this off for a few minutes then add a tin of drained kidney beans (chickpeas would work too).

Leave it to cook a bit, adding water (or red wine) if it looks too dry.

After 10 mins or so, pop in a good dollop of tomato puree (this gives it a nice red colour instead of looking brown!).

Cook it for as long as you can wait! About 45mins to an hour would be best. The flavour improves with cooking (or make it the night before you're going to eat it for best results – not always practical, that though!).

I serve it with brown basmati rice (lovely and nutty) and a green salad of lettuce, cucumber and avocado with a squeeze of fresh lemon juice. A blob of creme fraiche is lovely too!

Chili with meat, missing from last recipe. Here goes:-
1. Pound of minced beef
2. Medium sized onion
3. Red chilli
4 Small tin red kidney beans
5. Teaspoon of sugar, heaped spoon chili powder, tb spoon of vinegar. Tin of tomatoes.
Brown the beef, fry onion and chili in oil, add beef, tomatoes, chilli and sugar mixed with vinegar, add, bring to boil and simmer, 10 min. before end add kidney beans,serve with rice. OK..

Chili

Ground Turkey or Beef
Onions
1 can crushed tomatoes
2 cans red kidney beans - rinsed and drained
1 small tomatoe paste
1 can of beer
packet of taco seasoning or chili seasoning you pick the temp!!!


If using turkey ( Brown without oil)
Brown meat and onions in skillet until brown.

In Crockpot put Crushed tomatoes, beans, paste, beer and packet of taco seasoning.

Add Meat/onions to other ingredients in the crockpot

cook for 4 to 6 hours

Louise... I'm no expert at all here, but the beauty is you can make it how you like it!
Just add whatever you wish to the mince... I usually add a tin of chopped tomato, lots of worcester sauce and brown sauce, maybe some onion as well.. (whatever you like?) Add a teaspoon of chilli powder and taste... add more if you wish until it suits what you want!!

don't forget a handful of fresh coriander. Use beer as the cooking liquid, not water, much more of a "beefier" substantial flavour.

The adventurous might consider a spoon of cocoa powder. It might seem nuts, but unsweeted cocoa gives a very earthy, indefinable note to the flavour, similar to cummin powder. unsweetened cocoa is an classic part of mexican cooking, and a crucial ingrediant of the famous dish "chicken mole". Please don't use drinking chocolate, no, no, no.
