Most Sushi training courses are held by local Sushi restaurants so I recommend thay you call one of your local Sushi houses and ask them. I am sure that tou will get the answer that you want.

There is a wonderful gadget in a kitchen shop or you may find it on line, or QVC, that is a plastic sushi maker. Quite inexpensive,
under $20-
It not only makes the rolled kind, but heart shaped etc.
Comes with a recipe booklet.
Works great.
I use this, never needed a class

Check with your local community college or university. Some offer cooking classes in their continuing education departments.
