I have experiemented with many lasagna recipes the best I did was use a jar of cheese white sause until I got this recipe Im now the new favorite in the family

World's Best Lasagna
INGREDIENTS:
1 pound sweet Italian sausage
3/4 pound lean ground beef
1/2 cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
1/2 cup water
2 tablespoons white sugar
1 1/2 teaspoons dried basil leaves
1/2 teaspoon fennel seeds
1 teaspoon Italian seasoning
1 tablespoon salt
1/4 teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
1/2 teaspoon salt
3/4 pound mozzarella cheese, sliced
3/4 cup grated Parmesan cheese

DIRECTIONS:
In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
Preheat oven to 375 degrees F (190 degrees C).
To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

There are lots of very good and similar recipes out there. What sets great lasagna apart from good lasagna then?

4 secrets that can be used with most recipes.

1. Cook the meat onions garlic together with some basalmic vinegar, red wine, a little bacon and brown sugar. Then add to the tomato sauce.

2. Don't precook the noodles that just makes them too soft and waters down the sauce. Just put them in and let them absorb the juices.

3. Use a mild cheese between layers (mozzarella ricotta cottage)and use a strong cheese on the top like fresh Parmesan do not mix them as the contrasting tastes will be pleasurable to eat.

4. Green and red bell peppers can quickly overpower an otherwise great tomato sauce, use them very sparingly or not at all.

Mexican Lasagna

Ingredients

3 cups of Nutrela chunks soaked in warm water for 20 minutes (measure after soaking) as chunks tends to expand.
Non-vegetarians can substitute with ground meat.
1/2 cup each chopped onion and green pepper (capsicum)
2 1/2 cups salsa or crushed tomatoes
1 cup whole kernel corn (boiled)
2 tsp each chilli powder and ground cumin
3 jalanenos, 1 cup cilantro (coriander leaves)
10 corn tortillas (6 inch) divided
2 cups cottage cheese or paneer grated
1 cup shredded sharp cheddar cheese
1/2 cup sliced ripe pitted olives (optional)
2 tbsp vegetable oil.

Method:


Squeeze soya chunks and crush them with jalapenos and cilantro.
Brown this mixture in oil in a large skillet on medium heat for 5-6 minutes, add salsa or crushed tomatoes, corn and seasonings.
Layer 1/3 of the soya mixture, 1/2 of the tortillas and 1/2 of the cottage cheese in 13 x 9 -inch baking dish.
Repeat layers, ending with soya mixture. Sprinkle with cheddar cheese an= d olives.
Bake at 375 degrees F for 30 minutes.

You need to make your own tomato sauce, which is easy, jarred sauces are not good. You don't even need to cook the lasagna noodles, you just layer them dry. I put pieces of italian sausages in every other layer. (if you like meat) I also make lasagna where I do every other layer eggplant. So yummy,but couldn't possibly list a "recipe" in this forum. Its pretty foolproof. Unless you burn it, it will probably come out just fine, whatever recipe you follow.

Roasted vegetables lasagna.
(check all ingredients before you start.)
I use strong cheddar, because I find mozarella tasteless...

1 red bell pepper cut in slises
1 green bell pepper cutr in slices
1 big onion cut in lenghtwise slices
1 green zuchinni lengtwise slices
1 medium eggplant peeled and rounded slices:

put all these veggies on an oiled cookie sheet
bake in the oven fort about 10 minutes on each sides. Put aside
_______________
1 can of tomatoes
1 clove of garlic chopped
12 fresh basil leaves chopped
5 tablespoon of olive oil
1 small can of tomato paste
salt & pepper
a pinch of sugar
____________
(mid section)
1 cup of riccotta cheeze (not cottage please!)
1 tablespoon of grated parmesan
mix together and put aside
______________
(Cheeze topping for the sauce rows)
grate about 3/4 to 1 cup of cheddar cheeze
_______________________

Heat the oil in a big skillet,
add the garlic and the roasted veggies, stir untill it starts smelling real good, lower the heat add the tomatoe paste and mix well, when it is : immediately add the can of tomatoes, basil, salt , pepper and sugar,. Cook for about 3 to 5 minutes at minimum heat.

Prepare your lasagna pastas according to directions on the box.

Put a bit of the sauce in the bottom of your pan
add 1 row of lasagna
add one row of the sauce top with grated strong cheddar cheeze.
add one more row of lasagna, add the riccotta cheeze mixture.
add another row of lasagna, put the rest of the sauce and top with the rest of the grated cheddar.

Bake at 350 for about 30 to 35 minutes. Let stand at least 5 minutes before serving.

If you use these ingredients you will be pleasently surprised at how delicious this vegetarian lasagna is.

"It's In the cheese and meat mix" I make a Five cheese mix. I use Chatter,Mozelle,Pavilion, Ricotta, A Little Colby. Meats I use the spice Rack. A little of this A little of that. The biggest is your Taste buds!!! If it tastes good use it.
