The +, could represent the false idea that that was the design of the cross jesus was crucified on.
The x would represent the historically factual crux upon which the criminals of the time were crucified on, as the cross was not actually used until many years after the supposed death of jesus.
Then again, I can understand the early church choosing the former, as who would worship an idol with his arms and legs spread, for all the world looking like a starfish? Not a very dignified pose, I would've thought...hmm, perhaps that's one of the reasons why the Romans used that particular design - to add to the humiliation of the victim.
