Hi, a Po'Boy is a sandwich, but made with Louisiana bread which is crispier on the outside and softer inside. The po'boy usually has a meat or seafood filling (Shrimp Po'Boy is a norm) which has been fried.
There is a dispute as to the origin of the name. Either first used in a New Orleans restaurant when in 1929 the sandwich was given free to striking street car workers (or 'them poor boys') or that it comes from the French 'Pour Boire' meaning peace offering.
As for grits: it is a form of porriage and is very common in the Southern United States. Corn is ground with the finer parts passing through and the coarser grains left behind as the grits. They are boiled into a form of porriage, the more liquid is boiled off the thicker they become, and can be flavoured with cheese or perhaps bacon are a side dish to a meal.

A po'boy is a sandwich. It can have many different fillings. I think it originated in New Orleans. I'm guessing that it's called a po'boy because it used to be inexpensive food for working men. They're not cheap now though! Grits are a hot cereal made of corn. It can be yellow or white corn. Italian polenta is a kind of grits. Grits are yummy (to me anyway) and there are many ways to eat them. I like a casserole of grits and cheese with hot peppers.

A "po' boy" is short for "poor boy" and is a sandwich containing a lot of different ingredients. For a poor boy, everything that was left over in the kitchen--the meat scrapings at the bottom of the pan, a little gravy, etc.--would be thrown onto two pieces of bread and given to him. After it was found to be delicious, it was made and sold commercially.
"Grits" is short for "Hominiy Grits" and is made of ground up hominy, a type of corn.
