I know in Europe it derived from the custom of grasping the forearms near the wrist. This was a signal that you were not carrying any concealed daggers or knives. Initially this was done in fron of nobility to show that you were not an assassin. Originally it was done with the left hand as that was the susal sleve taht weapons were concealed so they could be easily drawn with the right. After the weapons were no longer evil, it was switched to a simple symbolic hand grab, and switched to the right hand, as anything with the left hand was, for many years, considerec to be evil. Especially since the word "Sinister" is latin for Left handed.
I really don't knaw much about It's origins in other cultures.
