mange-tout, carrot&swede(mashed- add a little butter, cream, seasoning)and cauliflower. For potatoes i recommend you chop potatoes into bitesize cubes and roast them(when cooked sprinkle with a little coarse sea salt and garnish with a bit of chopped parsley).
Serve veg in serving bowls for guests to serve themselves, it is more sociable and saves you stress!!
Whatever veg you decide, make sure you have a good variety, and think different colours- after all everyones taste is different and more colours look great on the table!
Keep it simple, it will still look great and the casserole is flavoursome enough, don't try to many fancy things you dont need to have too many different flavours on the plate!!
Oh yes and if you do decide to do mashed potatoes, a great tip with beef is to add a couple of teaspoons of creamed horseradish to the mash.

Roasted red potatoes with rosemary and tossed salad.
If you have not roasted potatoes before it is really easy! Much easier than mashing potatoes for 16! All you need to do is place cleaned and quartered potatoes on a cookie sheet with 3-4 Tablespoons of oil (I like olive oil). Salt and pepper potatoes to taste. Sprinkle 2 -3 Tablespoons of rosemary over the potatoes as well. Try rubbing the rosemary between your hands before putting it on the potatoes so that you will release the oils. Cook you potatoes at 375 until fork tender.

Keep it simple and let the Beef be the star of the Plate!!! I would recomend this easy vegtable that will serve many and add a nice highlight to the dinner. go to the store and buy maybe 4 large portabello mushroom caps. when you bring them home slice them length wise almost like you are making french fries. get out a glass bowl and put in some ICE, Freshly crushed Garlic Cloves, Pepper(pinch),Salt(pinch), Mint leaves soak the cut muschroom in this marinade bath. ten minutes prior to serving dinner strain mushrooms and place them on the grill or in a frying pan add alitle olive oil and sautee them up...serve next to beef or even on top! Enjoy!!!

Whole bunched carrots and broccoli. Both steamed. Delicious and the vibrant colours go well with the beef. Serve with pureed potatoes and celeriac. Slow cook your beef and add some wild mushrooms along with the shallots.

Something which is easy to get hold of in large quantities, but is a bit unusual.
How about:
cauliflower and broccoli cheese
mixed spring vegetables (baby carrots / mange tout / sugar snap peas / green beans / asparagus tips)
Along with baby new roast potatoes

After seeing all the answers I can't believe no one chose the perfect vegetable for beef in wine. Here in California it would be a sin not to serve asparagus. Steam it and serve with melted butter and lemon on top. Good luck with your party.

Something nice and easy for all those people! You probably want to do two or three varieties as someone is bound not to like something. Mashed or boiled potatoes, peas (doesn't everyone like peas), carrots and sweetcorn? Have fun, that's quite a feast.

You can cook vegetable soup. It's easy..... 3 cubed carrots, pinely cut celery, stripped cabbage, 2 chicken cubes, 5 cups of water,... boil them and add 3 beaten eggs. Stir and serve!
