Keep this as simple as possible chap, mashed potato is good as most people love it, its easy and it keeps its heat well, do some green beans as well as they are easy to serve and I would do some glazed carrots with it.

I'd do a medley of roast veg - parsnip, carrot, courgette and peppers etc. Colourful and easy to prepare. No pots of boiling water to drain off - you'll have enough on your hands preparing a meal for 16 people.

You could cook some carrots in the red wine - they would be tasty! Or try roast parsnips, with roast potatoes (or try some buttery mashed potato). Or roasted peppers, courgettes, red onions and a clove or two of garlic.

steamed baby sweet corn, cubed potatoes marinated in garlic butter & crushed pistachio nuts and i would also do a mix of chunkey carrotts & parsnips oven cooked with a drizzle of honey.

i suggest some lovely green veg, broccoli, green beans, asparagus, spinach, peas and courgettes. blanche each till they are cooked with a bite and then saute them in a little bit of butter, olive oil and garlic and finish with a squeeze of lemon and seasoning. i think this would accompany your main dish well as it won't be too over powering.

I would serve some kind of baked potato - either just a stuffed baked potato, or perhaps roasted veggies - carrots, potatoes, green peppers, celery, mushrooms and onions.

Bunched carrots and broccoli. Both STEAMED. Serve with pureed potato and celeriac. Add wild mushrooms with the shallots.

do you want hearty? if so, roasted garlic mash would be fab. Somehting more delicate, then maybe baby squash with green beans and herbs.
