Bagna Cauda
1/2 cup olive oil
1/4 pound butter
3 to 5 cloves of garlic, chopped fine
6 anchovy fillets, mashed
Pepper
Heat the oil and butter together in a double boiler. In another pan,
cook the garlic in a bit of the oil until it is soft. Add the anchovy
fillets, and cook until they dissolve into a paste, about 5 minutes.
Add to the pot of hot oil and butter.
Keep hot and use as a dip for celery, artichoke hearts, endive,
cucumbers, green onions and French bread.

4 Veal or lamb shanks
Well seasoned flour
1 Clove garlic -- minced
3 tablespoons Olive oil
1 cup Canned consomme
1/4 cup Dry white wine
2 tablespoons Tomato paste
Rind of 1 lemon -- cut into strips
3 small Carrots -- finely diced
1 tablespoon Parsley -- chopped
1/4 teaspoon Dried marjoram -- crushed
1/4 teaspoon Dried oregano -- crushed
1/8 teaspoon Dried sage -- crushed
Roll shanks in flour; brown with garlic in hot oil in skillet. Add remaining
ingredients to crockpot. Stir to mix. Add shanks. Cover pot and cook on LOW
for 10 to 12 hours until shanks are tender. Garnish with parsley. Serve with
pasta.

I just got into a meaninful relationship with an Italian man almost 2 yrs. ago and I have been learning to cook Italian dishes. Ihavent cooked this one yet, but have eaten it. I absolutely love Pasta Fagioli w/ that good grated parmesaan cheese on it !! I also love Manicoti !!!

I thought I knew a lot about Italian food, I guess u proved me wrong. I know more of Tuscany, where they use more bread than pasta, and I know a lot of their cheeses (Bocconcini is my fave) and wines. Try www.italianfoodforever.com, www.italianchef.com and italiancookingandliving.com. BTW are u a disgruntled Italian (upset that the world claims they know your cuisine when they don't) or are u generally asking, coz people do that with Indian food all the time and it pisses me off.

Try this:"Pesto alla Genovese"
olive oil,basil,garlic,cheese and walnuts.All in the mixer.It's the pest sauce for pasta ever!
