well, personally---it must be grilled. some people i've known loved to bake it---no.
use a very simple recipe for a marinade.
use seasonal ingredients.
pick one herb and use it.
i would marinate the chicken in brine (salty water, if nothing else) to help tenderize it. maybe lime juice---FRESH! i cannot emphasize FRESH enough.
red onions
cherry tomatoes
zucchini--maybe.
red peppers
marinade -and-final sauce
lime juice, cilantro, chili flakes, and water--if it's too strong for your taste...
grill until you think the chicken has about one minute left...pull of the grill. put in aluminum foil, pour "final sauce" (not marinade used with raw chicken).....let those juices settle for about 5 minutes.
serve with rice.
mmm. i'm hungry now.

The best marinade you could use for chicken and vegetables when using the BBQ is equal amounts of soy sauce and oyster sauce. If using say, 5 tablespoons of each, add one tablespoon of sweet chilli sauce for tang. Mix these 3 together and allow the diced chicken to stay in this mix for at least an hour. Then skewer the chicken and vegies. Best vegies are large chunks of onion, red capsicum, mushrooms and thick chunk of tomato (without the seeds). There would be no need to add any further seasoning once skewered, as the marinade on the chicken will be enough.

I like to marinade them in italian dressing and skewer with bell peppers and onions. Serve with wild rice.

My neighbor made the absolute BEST by marinading the meat in mcCormicks Hickory Smoked marinade which is a powder to which you add water or oil. Then she brushed the marinade on the veggies. THAT was the best I ever HAD!!!!!!!!!!!!!
