does anyone know the recipe of the chinese garlic sauce that u get in the take out restaurants?

Chinese Garlic Sauce
Yield: 1

Ingredients

2 tb of peanut oil
2 tb of minced garlic
3 tb of oyster sauce
1 a little fresh ginger grated
- if you; wish
1/2 c chicken stock or canned
-broth

Instructions

Heat wok or deep pan over high heat until it is hot. Add oil and wait
until it is smoking, add ginger and garlic and leave for a minute or so.
Then add the oyster sauce and stock simmering for another few minutes.
Pour over your favorite fried rice, white rice or meat, especially
chicken.

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds lean ground beef
3/4 cup soy sauce
2 tablespoons dry sherry
3 slices fresh ginger root, minced -- (about 1 tablespoon)
5 cloves garlic, finely minced -- (about 3 teaspoons)
2 tablespoons sugar
---Duck Sauce---
1/2 cup orange marmalade
1/2 cup apricot preserves
1 tablespoon soy sauce
1 tablespoon chili sauce
1 tablespoon grated orange rind
2 teaspoons grated lemon rind

Preheat oven to 350° F.

Combine all ingredients. Cover a jellyroll pan with aluminum foil. Using a
measuring teaspoon, make small balls of the mixture. Place the balls on the
foil. Bake for 20 minutes. Place in a chafing dish, with cocktail picks
and Duck Sauce nearby for dipping. Makes about 50.

To make Duck Sauce:
Put all the ingredients into the container of an electric blender or the
bowl of a food processor and puree until smooth. Makes about 1 cup.

1 tablespoon coriander, finely chopped
1 teaspoon green chillies, finely chopped
2 tablespoons fresh garlic, finely chopped
juice of 1 lemon
1 tablespoon powdered sugar
2 teaspoons white vinegar
salt to taste

Method


1. Mix all the ingredients together in a bowl.


2. Adjust the sweetness as required. Store refrigerated in an air-tight container.

What is the colour of the garlic sauce they serve you? black bean garlic sauce?

Try "Lee Kum Kee" spicy garlic sauce or black bean garlic sauce, they are available in most chinese grocery stores in anywhere.

1 cup soysauce
2 cloves garlic, sliced
1 tbs. ginger, sliced
2 tbs. oil

brown ginger and garlic to release aromas and flavors first. then add soysauce and oil. serve over anything.

I divi in a little cooking and beleive that it is basically : Soy sause, minced garlic and a little sesame oil.
