hi! I think u r talking about Tang Hoon or Mung bean vermiclli right? :)

Soak the vermicelli in cold water til it softens. ( I leave it for at least an hour or so. Do not use hot water as it will become too soft.)
Use it in soups or stir-frys or in thai/ vietnamese salads.
As the taste of the noodle is quite bland, it works well with stronger flavours.

I usually fry them with seafood or chicken and add lots of dark soy sauce and green veggies like bok chay.

Oh...the basic steps of most Chinese cooking is to heat up some oil, add garlic, fry til it is light golden brown, add meat, fry til 80% cooked, add seasoning (usually oyster sauce, soy sauce, sugar) to taste and veggies and the noodles.

These noodles are quite hard to digest, so don't have too much at one go, alright?

I like the best is to fried it. Soak the vermicelli with water until soft. Do not use hot water!!

Ingredient is:
1/2 onion, some mince garlic, spring onion cut into 1 inch long

Meat: Your preference. you can put slice pork or chicken breast, prawn, squid cut into rings. Marinade with some light soy sause, a bit of pepper and sesame oil and some corn flour.

Sauce: 3 tablespoon of water, some light soy sauce, pepper, pinch of salt and sugar (depends how salty you prefer), sambal chili (if you prefer hot). Mix it together.

Egg: 2 eggs beat and pan fried. Cut into strip

Heat up the wok, put in the onion and fried until fragant, follow by garlic until turn brownlish. Put in the meat and seafood and fried until cook.

Put in the sauce and cook until it boils; then add in vermicelli. Slowly use either the chopstick or the spatula to mix it with the sauce until well mixed. Lower the fire as the vermicelli easily burn. Then put in the spring onion and stir again until it looks dry (without any watery gravy).

Dish out and put the egg strip on top. Done!! Serve it with some cut chili and soy sauce.

You can also cut some ice cabage into strip and add together with the egg strip, to put on top of the vermicelli.

This receipe can be used for bean thread as well.

pour boiling water over it in a bowl!

It will just soften.
Then drain it and put it aside. It'd turn soft and pretty white.

What i do is that i would cook the soup first. You can use whatever bones as base, chicken, fish or pork.

But the idea is, you put the noodles in last (almost), unless you are putting vegetables in. Then the Noodle will be second last and the vege last.

That will ensure that the noodles does not go too soggy, yet had time to cook while the vege stays fresh and crunchy and not overcooked.

Vermicelli is just pasta, so use it in place of spaghetti with your favorite sauce. Just follow the package instructions for cooking it.
