Never in the microwave for one, it kills the nutrients according to a study I read a few months ago on broccoli cooking and nutrient retention.,,, really! the vitamins leach into any water you use. so *I* put a tiny bit of water in pan (dont have a steamer)and cook the water away. till the veggie is 'al dente' . I also use my cast iron skillet to cook in, because it ADDS the element (pun intended) of Iron, a necessary nutrient.

Steamed. When you boil vegetables, all the nutrients will be boiled out, and in the water.

Steaming is best in my opinion..quite often you can over cook while boiling.. you cook a lot of the colour, flavour and nutrients a way.. if you boil properly, it's okay.. but don't use too much water, and don't over cook..

Steamed is definately better. Boiling veggies leaves them with farl less vitamins and nutrients than steaming.
