Fresh Strawberry Granita
1 pound fresh strawberries, rinsed and hulled
3 tablespoons sugar
1/2 cup water
1 teaspoon lemon juice
Mint leaves, for garnish
Wash, hull, and slice the strawberries. Place sliced strawberries in a large bowl. Toss the strawberries with the sugar; let stand for at least one hour at room temperature, or up to four hours. The strawberries will be very juicy. Puree the strawberries and their juices with the water in a blender. Taste and add fresh lemon juice, if desired. At this point, if you want, strain out any seeds.
Pour mixture into a 13x9-inch baking dish. Cover tightly with plastic wrap and freeze approximately 45 minutes or until icy at edge of pan. Whisk to distribute frozen portions evenly. Cover and freeze again until icy at edge of pan and overall texture is slushy, about 45 minutes. Whisk to distribute frozen portions evenly. Cover and return to freezer and freeze about 3 hours or until frozen solid. Remove from freezer.
Using a fork, scrape granita down length of pan, forming icy flakes. Return to freezer for at least 1 hour. Can be made 1 day ahead. When served, the granita should look like a fluffy pile of dry red crystals.
Spicy Garlic Kale With Sauteed Red Peppers
2 bunches kale
1/2 cup leeks, chopped
5 tablespoons olive oil
1 small onion, diced
5 garlic cloves, minced (or extruded through garlic press)
1 1/2 large red bell peppers, cut into short strips
1/2 teaspoon red pepper flakes
salt
white pepper
Wash kale. Pull greens away from the stalks, discarding stalks. Shred by hand into small pieces.
Place kale in steamer basket, and steam until tender (approximately 10 minutes). Remove immediately from heat.
Heat olive oil in heavy pan over medium-high heat. When the oil is hot, add onions and leeks. Saute until onions are translucent and leeks begin to brown. Add garlic and red pepper flakes, saute for 1-2 more minutes. Add bell pepper slices, and saute until tender (approximately 4-5 minutes). Remove from heat.
Add kale to pan, and toss ingredients together thoroughly. Add salt and pepper to taste. Serve hot or room temperature.
Microwave Potato Soup
2 cups potatoes, cubes peeled and raw
1/2 cup finely chopped onions (we sometimes use the dehydrated minced onion)
1 cup water
1 1/2 cups half-and-half
1 tablespoon butter
1/2 teaspoon salt
1/8 teaspoon pepper
4 slices favorite cheese, thin slices (optional)
chives (to garnish)
Microwave potatoes, onion and water on high 8 to 10 minutes until potatoes are tender.
Cover and let rest 5 minutes. Mash potatoes with a fork into large pieces. This does help thicken the soup.
Add remaining ingredients except cheese and cook on high 5 to 8 minutes to serving temperature.
Garnish with cheese and/or chives.
Ww Pina Colada
1 cup frozen pineapple chunks
1 cup nonfat milk
1 teaspoon coconut extract
1 teaspoon rum extract or 1-2 ounce rum
1 (1 g) packet Splenda sugar substitute (optional)
Put the pineapple in the blender.
Pour the milk on top and the extract.
Whirl away. If not sweet enough, add Splenda

Ok, first of all, stop eating the fast food. Eat lots of fruits and veggies, but remember your grains, etc. And if you want to lose weight, exercise 2-3 times a week for about 20-30 mins.

u need to have protein, be sure and research what type of beans are good for your type diet. Also soy is an option also.
Try a veggie sub using provolone cheese then incorportate what veggies u like, salt and pepper and some fat free Italian dressing. Serve on crusty french bread.....
Oh by the way, I lost 60 pounds in three months by eating low fat.........but what ever i wanted.

Ready to go Vegan? That´s the ticket, ifyou followit correctly, it´s virtually impossible to be heavy.
My favorite vegan lunch:
Baked potato with Olive Oil and Herbs
Dinner:
Pizza, oh yeah! No cheese! Preferably whole wheat crust topped with sun-dried tomatoes, olives, capers and fried eggplant, hoo-ah!
Breakfast:
Muesli with Rice Milk (Soy is nasty)
Snacks:
Baguette w/ Peanut Butter
Sushi (made of seaweed, rice and cucumber with fresh horseradish, soy sauce and wasabe)
Remeber, examine everything before you eat it, if it has eggs, milk, etc, it´s a no go.
The sky is the limit, good luck!

Try eating fruit's and vegetables, don't eat oily, fatty and fried foods. Just boil or steam your vegetables...drink plenty of water, no alcoholic bev. Exercise also helps!.. Good luck!!! take care!
