Cashews are grown on a cashew tree .. The cashew flower produces a cashew (fruit/seed) which then develops a swelling called a pseudofruit (the marañón). The cashew does have a very hard resinous shell, but this is removed in processing to liberate 'cashew shell liquid', which is why the shell is never seen. The cashew shell liquid is extremely versatile and can only be obtained by removing the shell.
You can eat both parts of the fruit - the marañón and the cashew kernel.
Down here in Australia, we don't call them 'Cashew nuts', they're just 'Cashews', probably from their lack of hard shell in commercial arenas.
There's a good picture of the drupe and pseudofruit on wikipedia...
The info is a little staggered and sketchy, but the images are good.

they come from a fruit called Maranon, (I don't like the fruit but love cashews) the seed grows on the top outside of the fruit, and people toast it.
