French bread with a selection of cheeses and cold meats always goes down well. roasted vegetable rice salad is awesome! (let me know if you want the recipe!) pasta and cous cous salads are easy too. olives and other tapas are more modern twists as well. oh and sometimes indian snacks, bhajis, spring rolls, pakoras, go down well.

OK, here are some of the things I made for my Mum and Dad's silver wedding anniversary. It was for 100 people but you can scale down.
Tomato, Mozzarella and basil stack-Sliced tomato and mozzarella piled high, some ripped basil over the top, salt, pepper and a drizzle of olive oil.
Lime and coriander trout salad-cover the trout with the dressing and rub. Over bake for about 15 minutes. pick off the flesh and throw into a salad of leaves, cucumber, tomato, red onion and some yellow peppers. For the dressing you will need-olive oil, coriander, juice and rind of two limes, salt, pepper, alittle mustard. Throw it in a blender and blitz.
Fillet steak crostini with horseradish cream-Take a white loaf and with a round pastry cutter prepare as many pieces of bread as you want. Drizzle them in olive oil and bake in the oven until golden. Cook the fillet steak (medium well should be suitable, too rare and it won't get touched) and slice thinly. Whip some double cream til peaky but not stiff and add a couple of spoons of horseradish and mix. Place a dollop of the cream on the crostini and top with the steak.
Pasta salad-Boil some pasta. Mix some tomato ketchup and some mayonnaise and mix with the pasta. You can add other things to this, pretty much goes with anything.
Tartlets-You can put anything want on a tartlet. Perfect finger food. Cut out pastry rectangles about 2.5 in long by 1 inch and score 1cm in all the way round. Par bake. You should now have a clear centre section where the filling will go. Sweet and savoury work very well.
You might want to try-
fig and bramble
apple and raspberry
spinach and ricotta
chicken and sweetcorn
prawn & avacado
Apart from the prawn and avacado you should bake the tartlet after you have put the filling on top until cooked. The prawn and avacado can be placed on after cooking.

Overnight Buffet Salad
This is a great tasting salad to take to your next potluck or serve at your next dinner party. It feeds a lot of people and it is easy to make. The prep time includes the refrigeration of the greens after washing (I let the lettuce crisp up 24 hours) and the refrigeration of the completed salad for 24 hours.
1 bunch spinach
1 head red leaf lettuce
1 head butter lettuce
1 (10 ounce) package frozen peas
1 bunch chopped green onions
4-5 hard-boiled eggs, grated
1/2 lb bacon, cooked and crumbled
2 (1 1/2 ounce) packages ranch dressing mix
2 cups mayonnaise
1 cup sour cream
1 cup plain yogurt
Wash spinach and lettuce and spin dry.
Tear into small pieces, wrap in paper towels and refrigerate several hours, or overnight until dry and crisp.
In a 13"x9"x5" deep dish (I use the foil store- bought pan), layer half the spinach, lettuce, peas, onion, grated eggs and bacon; repeat layers.
In a small bowl, combine dry salad dressing mix, mayonnaise, sour cream and yogurt.
Spread prepared dressing over entire top of salad, making sure the edges are covered.
Cover with plastic wrap and refirgerate overnight.
Garnish the top with green pepper rings, sliced black olives or green olives, tomato wedges, and slices or wedges of hard-cooked eggs.

I do a lovely cold pasta salad. Just cook your pasta (I use the shell shape) and cool it under cold water. I add diced peppers, chopped spring onions, sweet corn, chopped asparagus and sun dried tomatoes. The tomatoes I buy off the deli counter at Asda, they are marinated in oil with all sorts of tasty spices. They are to die for. Mix all the ingredients into the cold past and then drizzle the oil from the sun dried tomatoes over. Serve with crusty bread

I make a stir fry for buffets, it goes down well.
Cook your rice, meanwhile fry some eggs and scramble them. Putting salt and pepper on. Caramelise onions. Then put all ingredients together. I add corn and peas, tuna, sometimes using quorn pieces too, curry powder and different types of spices in. I use about 1 to 2 tsp of mint sauce. Then i put sunflower seeds, sesame seeds, coconut. Its really quick and i dont measure the ingredients, i just throw them in. Im never left with any.

I would try the following:
roulade - roll out puff pastry, spread with your filling, roll up and cook, then when cool cut slices (like a savoury swiss roll) - my preferred fillings for this are
- roasted vegetables
- salmon & spinach
- tuna & sweetcorn
rice salad - cook rice, drain and cool then mix with your preferred combination - my preferences for this are
- salmon, peas & creamed mushrooms
- tuna, sweetcorn & natural yoghurt
kedgeree - rice, curry powder, hardboiled egg, smoked fish, sweetcorn and natural yoghurt
mushroom & cashewnut savoury flan - fry the mushrooms and cashewnuts with some onion, mix for flan filling with cornflour, a little milk and nutmeg
Have plenty of nice specialty bread, sliced & buttered, as people often find cold food less filling than hot (it's pyschological....)

Salad, chicken drum sticks, pickle, cheese, seafood, crackers, ocean sticks, cockles, prawns, dressing, salad cream, tomatoes, lettuce, grated carrot on the salad, cold (cooked0 sausage, and chips. They will all say chips? Then scoff the lot! Oven chips are a good idea. I forgot the Spanish and spring onions....

get some really nice slices of fresh ham, beef, etc, some cooked chicken say in tikka sauce, slice some fresh bread or rolls, selection of cheeses, green salad, fresh sliced peppers, houmous, dips, potato salad, vol au vents, coleslaw
and try cooking samosas, breaded mushrooms, spring rolls and serving them cold
and also pasta and rice salad are always nice= pesto is a favourite pasta sauce of mine

how about some egg salad, potato salad, green salad and pasta salad, then some breads, cold cuts, sliced onions and tomatoes and then you can have a chicken salad, a tuna salad and some 2/3 kind of mayo and mustard and let every one pick their salad and fix their own sandwich.
