People, please read my question. I don't need a recipe for Insalata Caprese. I need a recipe for the Balsamic sauce, some restaurants use it.

It sounds like you're looking for a balsamic vinegar reduction. You can search for a recipe, but basically all you need to do is heat some balsamic in a small saucepan (1 cup or as much as you feel you need) and simmer the vinegar until it's reduced by half (i.e. half of the water has evaporated). This will be sweet, tangy, and absolutely delicious with nothing else added.

True caprese salad is only with salt, olive oil and fresh oregano. But I feel you in America use some balsamic vinegar on it. It is not to be used on caprese!

The original versions DO NOT have vinegar according to this website: http://www.initaly.com/itathome/food/caprese.htm

but there is one at this website that has vinegar in the ingredients, seems the key is NOT to soak it!!! and use only organic fresh as possible vegetables and ultra fresh cheese: http://salad.allrecipes.com/AZ/InsalataCaprese.asp

original caprese is made of :tomatoes, fresh mozzarella (better: buffalo mozzarella), extra virgin olive oil, salt and basil...
