CHICKEN ADOBO

3 pounds skinless chicken breast
1/4 cup vinegar
1 tablespoon soy sauce
1 head garlic, crushed
8 whole peppercorns, crushed

Wash chicken. Cut chicken into serving pieces. Add vinegar to chicken in 4 quart saucepan. Add soy sauce and rest of ingredients. Do not stir chicken until it has started to boil. Cover and simmer chicken till cooked, approximately 30 to 45 minutes. Add water, if necessary. Remove chicken. Fry some garlic in butter. When browned, add chicken without liquid. Fry till browned. Add liquid and simmer for 5 to 10 minutes.

I think each family has its own special adobo recipe. With our family we just put the meat (we like it chicken and pork) in a pot. Put soy sauce, laurel (bay leaf), whole pepper corn, salt, and loads of garlic and some water and just let it boil until the meat is tender. Then that's the time we add vinegar and let it simmer w/o the lid. We don't stir it until the vinegar is cooked. Then if the meat is tender and a film of oil is already visible, that's the time we turn off the fire. It's done.

Now, how come there are no measurements... that's because since it's a family thing we just sort of make "tancha" or estimate the measurements but still it comes out yummy...

There's no such a thing as a perfect adobo recipe since adobo its for seasoning. You can season ANYTHING with adobo and just make it.

FOR MEXICAN STYLE ADOBO-
TRY-
PORK SHOULDER
1/2 CUP ADOBO (COMES IN A BRICK SHAPE)
ONION GARLIC ,GROUND CUMIN,SALT AND PEPPER
LARD-TASTES BETTER -BUT IF YOU PREFFER -USE CORN OIL

BROWN MEAT UNTIL YOU HAVE A GOOD CRUST

DISOLVE THE ADOBO IN WATER (WARM)
DRAIN OIL/GREASE ,LEAVE 2-TABLESPOONS IN POT WITH MEAT ADD 2-BAY-LEAFS,ONION,GARLIC ,
ADD 2-CUPS ORANGE JUICE
1/4CUP LIME JUICE
3-4 TABLESPOONS BROWN SUGAR
STIR UNTIL SUGAR DISSOLVES
ADD BEEF STOCK TO COVER (MEAT)
BRING TO A BOIL ,COVERED TURN HEAT DOWN AND SIMMER FOR 3-HRS
ADD STOCK AS NEEDED TO KEEP THE MEAT WET ,AND THE ADOBO SAUCE THICK ENOUGH TO COVER A SPOON
TEST THE MEAT FOR DONESS
IT SHOULD PULL OFF WITH A FORK

COOKED RICE WITH BELL PEPPERS,CORN AND SWEET-PEAS GO GOOD WITH THE ADOBOED MEAT

eggs boiled for 10 mins. cool, then crack and cut in half. You'll need a gallon of hot sauce and mayo. put them together and cut the eggs in half. take out the yolk and then scoop the hot sauce and mayo in the yolk part.

taste really good.
