What is a good stuffing for an empanada?

Here's the typical Galician (Spain) filling:
1 lb. fresh tuna cut into 1inch cube
1/2 C olive oil
2 C blended fresh, peeled tomato, here in Spain we grate the tomato, an easy way of removing the peel as it stays in your hand.
1 large onion, cut into lengthwise strips
1 bay leaf
salt to taste
Sauté the onion in olive oil until soft, add the tuna and mix. When the tuna is completely cooked add the tomato and bayleaf. Cover the frying pan and cook over low heat for 15 minutes.
Very simple and delicious.

It all depends on what you like to eat. I have tried beef, chicken, pineapple, pumpkin and apple. Empanadas can be filled with most about anything. I love them all.

I have had several stuffings in empanadas; beef; pork, veggie and chicken. All of these ingredients are used in latino cooking (mostly pork and chicken)
