For breakfast I generally have yogurt with fruit or oatmeal mixed with peanut butter. For lunch, I make a veggie sandwich on wheat with cucumbers, romaine lettuce, tomatoes, sprouts, and sometimes a slice of cheese with a little vinagrette. For dinner I like to eat light. I generally have a salad, vegetable soup, or fresh tomatoes sliced with vinagrette. I have almonds and bananas for snacks. That's a typical day. And I am a vegetarian. I love it!

I don't have a breakfast, lunch or dinner, I just eat like 6 little "meals" all day long.. not really meals.. lol
Today this is what I ate in order
Orange
Protein Bar (20g)
Chocolate Soy Milk
Apple
Almond Butter, Ezekial bread, and Banana Sandwich
Plucot
Carrots and Broccoli with 1/2 tbspoon soy whipped butter
Quorn Chicken Style Recipe Tenders with Dijon Mustard (Meat substitute)
Another Orange
Another Protein Bar
All my days are filled with mostly veggies and fruit with one or two regular types of food... like that sandwich... :-D

TODAY:
Breakfast: Small Apple, 1oz Nuts (this morning it was Cashews. Water or Hot Tea w/stevia
Snack: none because I was going out to lunch with my daughter & knew the portions would be huge
Lunch: Huge fresh made Salad from Pei Wei instead of chicken I had cooked veggies in it. Water w/lemon & oranges & 2 Fortune Cookies
Snack: LO from Lunch
Dinner: Fresh home made veggie stir-fry. Baby Bok Choy, Onion, Red Bell Pepper, Squash, Baby Carrotsi. Season with Tamari, Garlic, Black Pepper.1/3 cup of Brown Jasmine Rice
Snack: PopSmart Popcorn, 1oz. Dark Chocolate
Water all day long & at meals.

Cereal. Veggies can have Cheerios too. I put soymilk in instead of regular milk. Kashi is my favorite cereal. Sometimes I have toast, with vegan butter or jelly on it. Bananas and melon are really good supplements.
â¥Lunch
Sandwiches. I like spinach and almond, but with the e.coli scare lettuce and walnut is pretty good. I have some resh fruit afterwards.
â¥Snacking
Pretzels. I am a huge fan of pretzels. I don't know why. Fruit smoothies are good too, especially in the morning.
â¥Dinner
Something cooked. Often pasta. Sometimes I order in a pizza without the cheese, but piled high with mushrooms and pepper. Vegan lasagne is pretty good. If I am away, I always have salsa and tostadas with me. That makes a really good meal!
â¥Dessert
Vegan ice cream isn't as bad as you'd think it is. Apple sauce is good too. Sometimes a bar of special dark chocolate, with minimal milk in it.

I'm vegan, and a casual athlete. I count calories and nutrients daily. I eat 80 - 120 grams of protein, 200 - 250 grams carbs, and 30 - 45 grams of fat, and 40 - 60 grams of fiber daily. I usually start with a Hemp protein shake with berries and almond milk. Throughout the day I snack a lot on tofu cubes sauteed w/ Braggs amino acids and nutritional yeast, nuts/seeds, fruits, PureFit protein bars and Rawfood bars. I'll eat high-carb foods like whole grain crackers/breads/pastas/brown rice/quinoa, etc. if I'm really active that day; otherwise, I choose to eat "faster" digesting foods like fruits and nuts. For dinner, I go all out and fix a fancy meal, usually involving seitan and organic wine. I walk dogs for a living and don't stray far from home to do so, so I have to admit that I do have a lot of time during the day to make sure my diet is pretty near perfect. And I think you NEED to know how to cook to be a good vegan.
So, that said, here's yesterday:
B-fast: Hemp protein shake w/ blueberries, cocoa powder, and
unsweetened almond milk
Snack: Apple, soy nuts, wheat-grass juice w/ added spirulina
powder (added some raw agave nectar to sweeten)
Lunch: vegan "tuna" sandwich: wheat-meat (seitan), chick-
peas mashed, celery, onion, seafood seasoning,
flaxseed oil, pickles, and Veganaise mayo in a
whole wheat pita pocket w/ lettuce and tomato. MMMM.
Snack: handful of dried berries and pumpkin seeds
Dinner: miso soup w/ kale, ginger, and carrots;
Vegetarian spring rolls (take-out)
Pan-seered tofu encrusted w/ black sesame seeds, w/
bok chok, red peppers, chiles, celery, broccoli, and
edamame, in a japanese-style sauce, over bhutanese-
style rice. Bonterra organic white wine.
I played racquetball and lifted weights today, in addition to doing 4 1/2 hours of dog-walking. So this was a higher-calorie day.

Breakfast: melon, cottage cheese, fruit smoothie
Lunch: salad with nuts and vinaigrette dressing, and crackers
Dinner: I eat fish so something like sushi or salmon, with wild rice and raw veggies ( I don't like cooked veggies)
Dessert: Fruit tart or anything chocolate.
There you go I hope that helps....sorry I'm not vegan but I do try to minimize milk products, but I really love cottage cheese

For breakfast I usually eat fruits and maybe a slice of toast with cream cheese on it. For lunch and dinner it depends usually but I like things like pasta, rice, burritoes, lasagna, cheese and tomato sandwiches, etc. I also really like vegetarian chili that I make myself which usually has chick peas, red kidney beans, yellow beans, and any other kind of bean I want at the time. Veggie burgers are also really good.

However, I do on occasion eat meat-you should try not to put people in such strict categories. Non-vegetarians can also sometimes follow a mostly plant based diet.

Breaksfast: lemon water,organic oatmeal, fruit
Mid-morning snack: banana with peanut butter on it or some carrot sticks, celery sticks with a dip of some kind.
Lunch:salad with soup
Mid-afternoon snack: banana shake or some kind of shake(if home on the weekend) if not then some fruit and a granola bar.
Supper:Steamed veggies over basmati rice or some other organic rice
Mid-evening:fruit or organic fruit juice or yogurt with fruit in it
