This is by the book :
You serve from the left with the left hand and you remove from the right with the right. You serve the eldest woman first and then the rest of the women in order of decreasing age, men get seved next using the same protocol.

You serve from the guest's left and here's why. Back in the old days when we all had servants they learned to serve us from the left because as they moved around the table with the platter of whatever by offering it from the left the guest would use his right hand to moved the whatever onto his plate. This is one of those things that developed cuz most folks are right handed. This style is called Russian Service. French service is also done from the left but complete plates of foods are plopped down in front of the guest.

I've worked some elegant parties, and it was always serve on the left, clear from the right. Now, in my experience, you can't always do that. People are chatty, leaning at each other, so as long as you get the right plate in the right spot without having to say excuse me 1200 times, nobody will know.

You start with the most important person (or the host). If you're serving alone you serve from this person to the right, if more people are serving, you serve in both directions of the important person.
