I smoke pork butt quite regularly and then put it in sandwiches. If you are going to prepare it that way you can probably easily feed 12 really hungry people. I am assuming that it is bone in and will be served sandwich style. You will lose up to 1/3 of the weight from melting fat and the bone and gristle. That only makes 8 oz per person but the meat is so rich it goes far in sandwiches.

Is it bone-in or boneless? Then determine shrinkage. I don't think you will be able to feed more that 10 if it is bone-in. I also do not believe that you will be able to serve more that 15 if it is boneless. Pork shrinks quite a lot.

I'd say you have to count on each person eating 1/2 pound. Some may eay more and some may eat less. I'd go with 18-20 people.

I would figure at least half a pound per person and more if they are heavy eaters. Also, allow for the shrinkage and the fat content that reduces poundage during cooking.

Remember, there's a lot of fat in those which you'll have to trim after it's cooked. So it won't really be 9 pounds anymore, especially after shrinkage.
