Veg or Vegan Restaurant???
Great idea.....this is the cheapest food to produce in a restaurant....now pick a place that has a bunch of liberals....like Seattle! Oh, wait....we have one on every block as it is....so not Seattle.
Here is a good idea....instead of asking strangers how to get started, how about going to work for a restaurant and learning how to get started by doing the work???
Best restaurant I have ever seen: Ribs and Bibs.....it was a BBQ place....chicken, beef or pork with your choice of about 8 side dishes ....all for $4.95....refill your plate for $1.00....that place had a line waiting from 9am til 11 pm everyday!

First and foremost you will need more than just a 'want" to do this. You will need talent in cooking, recipes and just a bit of luck. (REstaurants are the number one business to fail in the first year.)
May I recommend you go to SCORE (The Service Corp of Retired Executives) and get more information on what the steps would be in setting up your own restaurant.
