I made this once during the bird flu scare when we were off eggs. It was not as light as cakes with eggs but otherwise it was quite fine.This recipe is for a plain eggless sponge. You can make your own variations with this basic recipe.
* 2 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1 (14 ounce) can sweetened condensed milk
* 1 cup orange juice
* 2 teaspoons vanilla extract
* 1 cup melted butter
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
3. Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
This cookie is quite a hit in my home and it does not require eggs.
Almond Crescents
* 1 cup butter
* 1/2 cup confectioners' sugar
* 1 tablespoon brandy
* 2 teaspoons water
* 1 1/2 cups almonds
* 2 cups all-purpose flour
1. Cream butter or margarine with powdered sugar until light.
2. Mix in brandy and water.
3. Chop almonds and set 1/2 cup aside. Add the rest of the almonds to mixture. Stir in flour and mix well.
4. Chill dough until stiff enough to mold.
5. Preheat oven to 350 degrees F (180 degrees C).
6. Shape dough into crescent shapes (Use about 1 tsp per cookie.)
7. Dip into additional chopped almonds
8. Bake on ungreased cookie sheet 12 - 15 minutes.
9. Cool on wire racks about 5 minutes.
10. Roll gently in additional powdered sugar after cooling.

Here is a cookie recipe: called Allotment Delights (vegan)
1/2 cup vegetable margarine
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup brown sugar
3/4 cup oats
2 tablespoons soya milk
1 cup puffed rice
1/2 teaspoon vanilla essence
1/2 cup dessicated coconut/powdered coconut
1 cup plain/all purpose flour
1/2 teaspoon baking powder
Preheat the oven to 190°C/375°F/Gas mark 5
Cream together the margarine and sugar. Add the soya milk and vanilla. Mix together the flour, baking powder, soda, salt, oats, puffed rice and coconut, then add to creamed mixture.
Drop by teaspoons onto greased baking trays. Bake 10 minutes or until browned. Cool on a rack.
Another one is the peanut butter cookie:
8 tablespoons corn oil
8 tablespoons golden syrup/corn syrup
3/4 cup crunchy peanut butter
4 tablespoons sour cream
1 cup porridge oats
2 cups wholemeal flour
1/2 cup dessicated coconut/powdered coconut
Preheat the oven to 180°C/350°F/Gas mark 4
In a large bowl, combine the oil, golden syrup/corn syrup, peanut butter and sour cream until well blended. Add the dry ingredients and mix thoroughly.
Place tablespoonful of the mixture, spaced well apart, onto greased baking trays. Press each one down slightly with the back of a tablespoon. Bake in the preheated oven, for 15-20 minutes. Cool on a wire rack. Makes about 24

I can't think of any of the top of my head, but try ay specifically vegan websites. Try goveg.com or peta.com, you'll find lots of great things minus the eggs. I've heared a lot about a cook book called "The Voluptuous Vegan" which I guess is great for desserts in particular. If you're feeling creative you can always go through recipies with eggs, and the eggs can often be easily substituted with cooking oil, or egg substitute which you can pick up from most major grocery stores. Journey Cake/Johnny Cake
this was made by early pioneer women. It does not contain milk or eggs since they didn't travel well.
Combine 1 1/2 cups sugar, 3/4 cup butter, 1 3/4 cup apple cider, 4 1/2 cups flour, and one tsp. each of baking soda, cinnamon, and cloves. Bake in 9x13" pan at 375 degrees for 45 minutes or until golden.

Basically you can use any recipe you have currenlty and then just buy an egg substitute at your health shop to replace the eggs. It works just as well, many companies are currently using "soy lecithin" instead of eggs..it's healthier and cheaper.

EnerG foods makes it. I am able to find it locally at the grocer, but if not there try your health food stores.
