Here is a recipe for Batata Saag(Red Hot Potatoes)
4 big potatoes boiled and cut into cubes
2 medium onion(s) sliced finely
1 big tomato(es) chopped finely
1 teaspoon(s) red chilli powder or as per taste
½ teaspoon(s) tamarind paste or as per taste
4 tablespoons oil
salt to taste
1. Heat oil on medium level in a pan for about 2 minute(s). Add finely sliced onions and fry on medium heat till they are lightly browned. Now add red chilli powder and fry for a few more seconds on low heat till you get a good roasted aroma.
2. Add chopped tomatoes and fry again on medium / low heat for 3 minute(s) or till the tomatoes are tender and the oil has left the sides of the pan.
3. Add now the tamarind paste and the boiled potato cubes. Sprinkle some water and salt to taste. Mix thoroughly. Cover and keep on low heat for about 4 minutes.
Palak Dal
1 cup(s) split green gram (moong dal)
1 bunch(es) spinach chopped
1 medium tomato(es) chopped
1 medium onion(s) chopped
1 teaspoon(s) cumin seeds
½ teaspoon(s) turmeric powder
1 tablespoon(s) finely chopped ginger
2 green chilli(es) slit
2 flake(s) garlic
2 tablespoon(s) butter / ghee (clarified butter)
red chilli powder and salt to taste
fresh coriander leaves to garnish.
Soak the split green gram in water for about an hour. Grind the garlic, green chilli(es), ginger and onion(s) to a fine paste. Add the turmeric and red chilli powders to the paste and mix. Heat the butter /ghee (clarified butter) in a pan and fry the cumin seeds till they splutter. Add the paste and fry till fat leaves the sides. Now add tomato(es) and salt. Fry / cook on medium level for about 3 minutes.
Add the soaked gram and double the water. Cover and boil on medium / low level for about 5 minutes or till the gram is tender.
Add the chopped spinach and simmer for about 3 minutes or till the spinach is cooked.
Garnish with finely chopped fresh coriander leaves.
Which you can cook along with rice to make a complete meal. Its really quick.
You did not mention weather you wanted vegetarian of non vegetarian recipes so I have given only vegetarian ones.

Hmmm,a recipe without knowing whether you're a veggie or not.On the safe side,here's an approximate recipe for a quick potato curry. If ur a first time cook,make sure all the ingredients are gathered before u start,to make it easier.
Ingredients:
Cooking Oil - 2 1/2 Tbsps
mustard seeds 1 tsp (if u hav them,they enhance flavor,if u dont its ok)
2 onions (sliced)
1 clove garlic( sliced)
2 green chillies (sliced)
2 large potatoes (small cubes)
Garam masala 1/2 tsp
Turmeric powder - a pinch (optional,only if u insist on a yellow colored dish)
Chilli powder - slightly more than a pinch( again optional)
Salt - to taste
Water - According to reqmt.
Preparation:
1. Heat oil in a pan.
2.Once oil is sufficiently hot, add mustard seeds.[Optional] (to check if oil has reached required heat,add a couple of mustard seeds or a piece of garlic,the mustard seeds should splutter immediately or the garlic shud sizzle)
3.Add onions,garlic,chilles and saute till onions become light golden
4. Add masalas and saute for a minute,
5.Add potatoes, stir till all the masala coats the potatoes, leave for a minute.
6.Then add some water and cover and cook till potatoes are well done and can be mashed with a spoon.
The dish shud hav a little gravy consistency.
Goes well with bread, chapathi's etc.
If u dont mind eggs, beat up a couple of eggs with salt and pepper to taste.Pour it onto a nonstick pan or an oiled pan and while it cooks add some cheese or finely diced tomatoes to it.Once the omllette is half cooked, fold one side over the other. Continue cooking till done.

Fast And Simple :Tomato Curry Recipe (Kerala Style) Ingredients: Red tomatoes - 3 Green Chilly - 2 Salt - rqd Coconut - 1 cup Cumin seeds - 1 tsp Shallot - 3 Turmeric Powder - a pinch Chilly Powder - ½ tsp Coconut oil - 2 tb sp Mustard - 1 tsp Curry Leaves - 1 stem Shallot - 1 tsp Procedure: Cut the tomatoes into small pieces. Boil the Green Chilly (chopped in two pieces) tomatoes and salt with water. Grind coconut, cumin seeds, chilly powder, turmeric powder, shallots. Add the mixture to the smashed Tomatoes, let it boil and remove from fire. Heat oil in a pan, splutter mustard seeds, add chopped shallots and curry leaves and sauté well. INGREDIENTS
? kg paneer-cut into broad slices
2 tbsp chickpea flour
1/4 cup clarified butter
1 tsp cumin seeds
1 tbsp finely chopped ginger
1 cup hung yoghurt
1/4 tsp turmeric
2 tsp coriander powder
salt to taste
1/2 tsp chilli powder
1/4 tsp garam masala
2-3 green chillies-slit
1 1/2 cup water
1 tbsp chopped coriander leaves
2 tbsp malai
METHOD
Heat the clarified butter in a pan and fry the pieces of paneer. Lift them out and set aside. In the same clarified butter, add the cumin seeds, sauté a little and add the ginger.
When the ginger turns a light brown, add the chickpea flour. Sauté and add yoghurt, turmeric, coriander powder, salt, chilli powder, and garam masala. Sauté over a medium heat till the fat separates.
Add the green chillies, sauté a little, then add the water and bring to a boil. Simmer for 3-4 minutes.
Add the fried pieces of paneer, simmer for about 2 minutes and serve hot, garnished with chopped coriander leaves and cream.

Take a pack of minced meat - beef, pork, chicken, turkey - whatever you like
Put in a bowl.
Add a good spoonful of a good curry powder or paste, (one you particularly like) some chopped coriander, and a beaten egg to bind the meat together.
Form into balls with wet hands, fry in a shallow pan in a small amount of oil until lightly browned and cooked through.
Drain on kitchen paper, and serve garnished with more chopped coriander or mint, some onion rings and a slice of lemon, with a side dish of plain yogurt if liked, and a bowl of rice, or some flat breads.

Fry some onions. Then marinade the chicken with and with ginger and garlic paste,salt and pepper, 2 spoons of plain Greek yogurt the fried onions, some raw onions. Add tandoori masala to it. Take some coriander, a green chili and grind it with a touch of lemon. Add this to the chicken. Leave it to marinade for about 2 hours. This marination will make the chicken tender and juicy!
Rap it in some foil.
Then leave it to cook for about 30-45 minutes in the oven.
Sprinkle some coriander on top of the chicken. Serve with nan bread and also you can have some yogurt, pinch of salt with cucumber cut in cubes.

get 2 lbs chicken breast
can of curry paste (like pataks)
can of chopped tomato
get 2 medium onion
3/4 cup basmati rice
to make curry:
dice onions
cut chicken breast into 1 in cubes
fry diced onion in a little oil until golden brown
add 2 (depends on desired hotness) Tbsp curry paste, and chicken cubes fry on med high for another 3-4 minutes, stirring occasionally
add can diced tomato, 1 cup water, cook 20 min on simmer until chicken cooked
adjust with salt and pepper and possibly more curry paste to taste
to make rice:
first heat a little butter or ghee in a sauce pan, cook rice in oil for 3 minutes and then add 1 1/2 cups water (be careful water will splatter) and 1/2 tsp salt, bring to a boil, reduce to medium low, simmer until rice is tender
serve curry over rice

Skillet Chicken Curry
This simple dish is rich and delicious; serve it with hot cooked rice.
INGREDIENTS:
1 apple, peeled, cored, chopped
1 onion, chopped
1 Tbsp. butter
1 Tbsp. olive oil
1 Tbsp. curry powder
10 oz. can condensed cream of chicken soup
1 cup heavy cream
1/2 tsp. salt
1/8 tsp. pepper
8 boneness, skinless chicken thighs, cut into 1" pieces
3/4 cup sliced mushrooms
1 tsp. smoked paprika
PREPARATION:
In heavy skillet, cook apple and onion in butter and olive oil until tender, 4-5 minutes. Stir in curry powder and simmer for another 2-3 minutes. Add soup, cream, salt and pepper and stir. Bring to an simmer.
Add chicken to pan along with mushrooms and paprika. Bring to a simmer and cook for 20-30 minutes, stirring occasionally, until chicken is thoroughly cooked. Serve over hot cooked rice.
