I'm stuck! My daughter's 1st birthday party is on Saturday. My husband wants to make chicken satay, I will have chips,veggies/dip, finger foods for the other children. The party is only 2 hours so I don't want to go overboard but I would like to make a couple of other heavy hors d'oeurve dishes that compliment the chicken satay.

Here's my two cents...Stick with the fingerfoods for the kids: seedless grapes, chips, PB&J sanwiches (small triangle cut), cheese sticks, goldfish crackers, etc...

To compliment the chicken satay, you could always make a curry rice salad (take cooked white rice and combine with carrot shavings, raisins, toasted almond slices & a little bit of curry seasoning), cumcumber salad (Asian style: cucumber slices, red onion slices with a vinegarette dressing of (sugar & rice wine) and fruit kabobs.

I wouldn't do chicken satay because you can't feed that to children under the age of 3 these days for concern of undisclosed peanut allergy. Can you talk him into something a little more kid-friendly? Is this party more for adults or children?

If he's determined and you need heavy appetizers to go with it, then do spring rolls, steamed dumplings, lettuce and chicken wraps, or some sort of noodle dish. Go here: http://www.thaikitchen.com/appetizers.html#

Your daughter will not remember what you cook. Give her an ice cream cake from dairyqueen and some baloons to play with. She will have a blast and it's a lot less work for you.

for a sweet treat...
turtles-- take mini pretzels and put a rolo candy on it.. nuke for like 10 seconds.. mash a pecan on top... wala.. a yummy turtle.. and way easy!
