I am vegetarian, and havent yet found a way to make fried egggplant without eggs, the breadcrumbs just wont stick, they fall off in the oil, no matter what I try.

Does anyone know how I can make them stick? Any good egg plant recipes? THANKS!

Here's the BEST way (also works with green tomatoes etc.) - dip the slices in soy milk (or regular milk if you use it), then coat in the crumb or flour mixture, then repeat the process. It should be well coated after the second time, but you can repeat it again for a thicker coat. Good luck!

You can brush the eggplant with olive oil first, or....

Here's a vegan egg substitue for you!



1 tablespoon ground flaxseed
2-3 tablespoons water


Simmer flaxseeds and water in a saucepan for about 5 minutes (or less or more time depending on the amount you are making) or until thick, egg-like consistancy has been reached.
Let cool before using in a recipe.
This recipe makes 1 eggs worth, but it can be easily made into a larger quanity using the 1:3 ratio- for example, 1 cup ground flax seeds and 3 cups water (that would make 16 eggs worth) and will keep in the fridge for about 2 weeks.
Use about 1/4 cup (which is equal to 4Tbs) egg substitute for every egg.

I suggest that you just reconsider your vegetarianism. A little egg white occasionally is not going to harm you in any way. Also, if you buy Cage Free/Free Range eggs you aren't even hurting the chickens either! As an Omnivore... I dont have much experience with Vegetarians, but I do have a Friend who is Vegetarian and eats eggs... but not the flesh of dead animals. An egg is not a dead animal... but rather naturally produced protein that was INTENDED to feed a growing chicken. But since the Chicken was not allowed to grow inside that shell... why waste the great protein??? Just a thought...

I think the others are correct about the oil coating to help the breading stick. My Mom made Fried Eggplant regularly as I was growing up and I dont recall her having to use eggs. It was delicious... and those sure were good times way back then...Sitting around the Kitchen table with Mom cooking eggplant fresh from the garden...

You can try this.

1 large eggplant
water
1 cup of flour
1 tablespoon of season salt
1tablespoon of garlic salt
1tablespoon of onion salt
shake in some pepper

Directions:

Combine flour, season salt, garlic salt onion salt and dash of pepper in a bowl.

Slice the eggplant into disks, and dip in the water in a seperate bowl. After letting the access water drip off, dip the eggplant slices in the spice mixture.

Place on a cookie sheet and bake at 350 for about 20 minutes or until golden brown. Take out of the oven, spoon Italian spagetti sauce over the top and sprinkle with soy mozzarella. Place back in the oven for another 6 to7 minutes.

It tastes great with spagetti or lasagna.

Preparation time: 30 min

FRIED EGGPLANT 1 tsp. turmeric powder 1 tsp. minced garlic 1 tsp. red chili 1 tsp. salt 1 lg. eggplant 3/4 c. oil to fry Slice the eggplant in thin slices. Mix the other ingredients together except oil. Mix the ingredients with eggplant slices and fry them 5 or 6 slices at a time. Sliced eggplants can be served as side dish.

Use a little olive oil on the dry eggplant to moisten it and then roll them in the bread crumbs. Let it rest a few minutes to let the oil and bread crumbs become "one". And then coat again before frying. This should work. What is happening is there is nothing to make the bread crumbs"stick" to the eggplant. Also make sure you oil is the right temp before you start to fry other wise no matter what you do the breading will come off. If you sprinkle water over the oil it should pop or take a little wet bread crumbs in the oil it should sink and then rise immediately when the oil is the right temp.
