It means it is safe to cook in it when baking in an oven. Such as Pyrex, a specially treated glass that is oven safe. Regular pretty glass dishes are NOT oven safe, and will crack at relatively low oven temps. You will need to use pot holders or oven mitts with Oven Safe dishes, regardless. They still get hot enough to burn you, but won't crack from the heat.

Oven safe means that the dish was designed to operate (won't melt or crack) under conditions similar to an oven - high heat up to 500 or so degrees Fahrenheit.
Any differences in heat conduction between an oven safe and a non-oven safe dish is negligible.
My oven safe dishes work well in my regular oven, my toaster oven, and when I had one, my microwave. However, that does not mean that all oven safe dishes are appropriate to use in a microwave. An oven safe glass dish is generally ok to use in both an oven and microwave.
If you're getting anything out of a microwave or oven, it is generally a good idea to use oven mitts or some item of that sort to protect your hands from being burned.

OVEN SAFE means that, when the dish was created, the manufacturer determined through testing that the dish you plan on using is safe inside an oven for general cooking purposes and won't crack under the stress of the oven.

Oven safe means they are ok to use in the oven for baking. They will still get hot so use pot holders to retrieve them. Just because something is oven safe does not necessarily mean it is microwave safe. The dish should tell you in the paperwork that comes with it or on the box it comes in. If no paperwork is available, check online with the product name

julie, oven safe or microwave safe is very simple. it does not mean that the plate is gonna be cooler than a normal pot/pan or plate would be when takin out of the oven/micriwave, it simply means that it can with stand high temperatures meaning if you put a regular plate inside the oven and you set the oven for 450 it will brake the plate coz most of the plate are not oven safe. the microwave safe items and oven safe items are tested to withstand high temperatures, hope this helps you..

The dish won't break or melt in temps up to 600 degrees F. "Oven safe" doesn't refer to microwave, or it will say it. Oven safe (in an oven) dishes get TOO HOT to handle without potholders. Microwave safe dishes usually aren't hot if they have handles, but the belly of the dish could be too hot to grab.
