carbon dioxide inside the little pockets, if it was baking soda it would taste horrible, and baking soda doesn't "pop" it fizzes and makes physical matter expand

Pop Rocks are simply candy produced under a high pressure
carbon dioxide environment. Under very high pressure, the candy is stirred
so that bubbles get into it. It is then allowed to harden. Then the
pressure is taken away. As soon as something breaks down the structure
of the sugar crystals, (dissolving, biting, etc.)the carbon dioxide escapes
with a loud *POP*.

i don't know but they sure taste good....lol.

it has something to do with carbonated sugar or something like that...lol.
