Maple-Chipotle Barbecue Sauce
FAST
MAKE-AHEAD
TOTAL TIME: 25 MIN
MAKES ABOUT 1 CUP

3 large chipotle chiles in adobo, stems discarded
1/4 cup ketchup
1/4 cup pure maple syrup
1 cup low-sodium chicken broth
1/8 teaspoon ground allspice
1 tablespoon vegetable oil
1 medium onion, minced
2 large garlic cloves, minced
Salt and freshly ground pepper
1 tablespoon fresh lemon juice


directions
In a blender, combine the chipotles with the ketchup, maple syrup, broth and allspice and puree until smooth.
In a medium saucepan, heat the oil until shimmering. Add the onion and garlic and cook over moderately high heat until golden, 5 minutes. Add the chipotle puree. Season with salt and pepper. Cook over moderate heat until thickened, 15 minutes. Stir in the lemon juice. Transfer to a bowl and let cool.

Actually just get an inexpensive bottle of chipote sauce. (Here in Mexico the cheapest costs about 40 cents, better ones about $1.50) Mix in a little lemon juice, some chopped and mashed garlic and add to a cup or so of sour cream, add the chipotle to taste. (Some chopped cilantro will always go well too.)

(This also makes a wonderful sauce for deep fried tacos (flautas) or shrimp!)

In nearly any supermarket, in the mexican food shelves, you can find cans or jars of chipotl peppers. Take one of these, drain and separate the peppers (man they be HOT) and take the suace and put it in another jar. Mix just a peaspoon or two of this sauce with a cup of
mayonaise... if you are whimpy about spicy food, half a teaspoon.

Great with calamari!

Put a can of chipotle chiles in a blender with your favorite salsa. Add tomato paste to thicken to taste.
