TORRIJAS...with an i not an e...
Torrijas is simply the spanish word for french toast...
It's a dish prepared all over the world, not just Latin America and Spain. (The french call it "du pain perdu").
In Spain they are made especially during Holy Week, when you can find them in most pastry shops and cafés...
The recipe varies slightly, basically the same as your ordinary french toast. the variations could be white or sweet wine instead of (or added to) the milk. and vanilla or cinammon also directly added to the milk.
Once they are prepared, in Spain they are covered with a light sugar syrup (almibar) before serving
In most Latin American countries the same basic recipe is used, each country may have its own slight variation.
I cover mine with maple syrup, or honey instead of the sugar syrup. On sundays when the family is together... I make a big stack, and put a tray of assorted jams, jellies, brown sugar, honey and maple syrup next to the platter, and everyone adds whatever they prefer.
