I'd appreciate precise measurements of ingredients. A cup of soy sauce, a cup of vinegar, etc, Sorry, i prefer 100 ml.or whatever the correct measurement is.

FILIPINO CHICKEN & GARLIC ADOBO
(You can also add pork to this recipe if you prefer just substitute the chicken)

Ingredients:
2 lb chicken pieces, cut up or whole
1 head of garlic, coarsely chopped (yes, an entire head!)
4 Tbsp soy sauce (or more to taste)
1 tsp ground black pepper
2 cups water
1/2 cup vinegar (rice vinegar or white wine vinegar work best)
2 bay leaves
2 Tbsp cooking oil


Directions:
1 Put vinegar, bay leaves, pepper, soy sauce, and
water in a saucepan. Cover and cook slowly about
15 minutes.
2 Meanwhile, heat the cooking oil in a large,
heavy-bottomed frying pan. Peel the garlic, break
the cloves into chunks, and brown them over
medium-low heat (about 5 minutes).
3 Add the chicken to the frypan and brown it over
medium-high heat (about 5 minutes).
4 Add the broth to the frypan and simmer, partly
covered, until the chicken is done (about 30
minutes). Do not let it come to a boil.
5 Remove the bay leaves and serve over rice.

This dish is too strongly flavored to go well with wine; try serving it with beer. You can substitute pork for the chicken, or mix the two. In the Philippines it is the custom to marinate the meat for two days rather before simmering; with the top-grade meats that are universally available in our grocery stores, that is not necessary (though it does deepen and enrich the flavor). To marinate the chicken, mix in the broth and 3 of the garlic cloves after step 1, then put the chicken in a glass dish and pour the marinade over it. Adobo is the national dish of the Philippines. Most warm-weather countries have through the centuries developed recipes that preserve food while flavoring it. This dish is different than many because of its strong component of vinegar. It is at once sour, salty, and drenched in garlic.

Authentic Adobo

1 package boneless skinless chicken breasts, cut into chunks
1 large onion, chopped
2 cloves garlic, minced
3 potatoes, chunked
3 carrots, in thick slices
1/4 cup soy sauce
1/4 cup white vinegar (or Filipino, Japanese, or Korean vinegar)
1/4 cup sugar
1/4 cup cooking wine (preferably white)
1 dash salt and pepper
3 bay leaves
1 dash italian seasoning or oregano
1 dash orange rind
cornstarch (2 tbsp mixed w/ water)


Into a medium large saucepan, put 2 cups of water, chicken (or tofu--see note), onion, garlic, soy sauce, vinegar, cooking wine, and sugar.
Bring it to a boil.
Add the spices and simmer 5 minutes.
Add the vegetables and cook until tender.
Thicken the sauce with the cornstarch mixture.
Serve with steamed rice.

Well, I have made it a few times but I don't use any measurements - it's like, 1/3 cup soy sauce to 3/4 c. vinegar - it is yummy, but sorry I don't have exact measurements. The nurse who gave me the recipe moved away, but I remember him telling me that it was an old family recipe & he didn't have measurements either. sorry. Try a filipino website or cookbook. Adobe Pork
3 Cloves Garlic -- minced
1 teaspoon Ground Cloves
1 teaspoon Ground Coriander
1 teaspoon Ground Cumin
1 teaspoon Coarsely Ground Pepper
1 kilo Boneless Pork Loin
1 can (500 grams.) Chili Beans
300 ml Water
3 medium Onions -- cut into 3 cm pieces
Thin Strips Of Lemon Zest

Heat the oven to 180C. In a small bowl, combine the garlic, cloves, coriander, cumin, and pepper. Rub the mixture on the pork loin. In a roasting pan, combine the chili beans and water. Place the pork loin on the chili mixture. Place the onions around the roast. Cover and bake 1 hour. Uncover and baste. Continue baking, basting occasionally, until the meat is done 2-2 1/2 hours Serve the sliced pork with the chili and onions. Garnish with the lemon zest. Serve with rice if you please.
