Chinese Walnut Chicken
Chicken breasts strips are stir-fried with scallions, ginger and garlic, and seasoned with bourbon and soy sauce.Ingredients:
• 1 teaspoon cornstarch
• 1 Tablespoon water
• 1 egg white, beaten
• 4 skinless, boneless chicken breasts, cut into one-inch cubes
• 3 Tablespoons soy sauce
• 1 Tablespoon bourbon
• 1/2 teaspoon sugar
• 4 Tablespoons oil
• 3 whole scallions, cut into 2-inch slivers
• 2 slices fresh ginger, minced
• 1 medium garlic clove, minced
• 3/4 cup coarsely chopped walnuts
• Hot cooked rice
Method:
In a bowl, mix together cornstarch, water and egg white. Add chicken and toss until thoroughly mixed. In a small bowl, combine soy sauce, bourbon and sugar. Set aside. Heat a wok or large heavy skillet over high heat until a drop of water "skittles" across and evaporates immediately. Add 2 Tablespoons of oil, swirl, and add chicken. Quickly stir-fry 3 to 5 minutes or until no pink shows. Quickly remove from pan and set aside. Reduce heat to medium-high and add the remaining oil to pan. Add scallions, ginger and garlic; stir-fry for 1 minute. Return chicken to pan. Add soy sauce/bourbon mixture and cook, stirring, about 1 minute. Stir in walnuts, mix well and serve with hot cooked rice.
Notes:
One tablespoon of bourbon is the secret ingredient in this recipe. But since nobody in our family drinks, I buy the smallest bottle of bourbon possible and keep it in my seasoning and flavoring cabinet among the vanilla extract, maple syrup and spice blends. It won't spoil and keeps forever.

Try cutting up chicken into small pieces, season with garlic powder or a little chopped garlic, cook till no longer pink, add a can of pinealpple chunk's ( do not add all the juice), add some soy soy sauce to taste, serve over rice. Quick & easy to prepare, and taste's great. Enjoy!
PS. if all else fail's go to nearest phone and call for take-out!

Ok, mine is pretty simple but everyone raves about it: 1 lb ground beef, cooked and drained of fat (at least some of the fat!) 3- (6 oz) cans tomato sauce 1- (6 oz) can Salsa El Pato (its a spicy tomato sauce in a yellow can with a duck on it, you could probably get it at wal-mart)(with all the other stuff, just one can will only make it a little spicy, but if super sensitive, add 1 more can of Tomato sauce) 1- (4 oz) can tomato paste 1 cup of water (more or less to desired consistancy) 1 packet spagetti seasoning (the $1 packets from by where you get sloppy joe and taco seasoning) Mix all together and let simmer (thats on low-low heat) for about 10-15 min. As for the noodles, I always break the dry noodle in 4 pieces (by the handful) before cooking them so that they are not too long when eating. And make sure not to over cook the noodles - too soggy noodles ruin everything. I also do my "almost homemade" garlic bread with it: 1 loaf "garlic bread" from the store - pre cut and buttered add more butter sprinkle on lightly garlic powder (make sure its powder!) spinkle generously parmesean cheese Bake in 350 deg oven for 10-15 min, cool slightly, cut and serve.

I like to make this in winter when I'm alone at home and being lazy. I put everything in the electrical rice cooker (it'sa recipe for claypot rice though)
<<<<<< Chicken & Mushroom Rice >>>>>>> serves 2
400 g Chicken thighs, cut into biteful size
2 slices ginger root, slices thinly
4 dried shitake mushroom, soak in hot water till soft,
200 g Jasmine rice
1 can of chicken soup (for cooking rice)
water (cooking rice)
2 tablespoon soy sauce + 1/2 teaspoon sugar + 2 tablespoon chicken soup
Chicken Marinade
2 tablespoon soy sauce
1/2 teaspoon sugar
1 tablespoon cooking wine
1 teaspoon garlic power
1 teaspoon corn flour
1 teaspoon sesame oil
1) Wash rice and cook with a electrical rice cooker, follow the instruction to adjust water level with chicken soup.
2) Marinted the chicken pieces for 15 minutes or till rice is almost ready.
3) When rice is nearly done (you see the water is bubbling on the surface of rice but still waterly) before the switch pops up, spread chicken pieces and mushroom slices on top of the rice quickly, cover the cooker as soon as you can.
4) Let it steam for about 15 minutes after the switch popped up or till the chicken is cooked.
5) Heat a sauce pan over medium heat, add 2 tablespoon soy sauce, half teaspoon sugar and 2 tablespoon chicken soup, simmer for 2 minutes. Drizzle on top of chicken rice.
5) Serve with boiled vegetables.
I posted some other Chinese recipes here in yahoo answers, you may get more ideas from my answers to other questions.
Enjoy and have fun!

Quick & delicious...and a great alternative to plain old pasta.
COLD CHINESE NOODLES WITH SESAME SAUCE
7 tbsp. soy sauce
3 tbsp. sesame oil
3 tbsp. hot sesame oil (chili sesame)
3 tbsp. peanut oil
1 1/2 tbsp. tahini
3/4 tsp. sugar
3 tbsp. rice vinegar
3 cloves crushed garlic
1 tbsp. finely chopped ginger
Chopped scallions
1 lb. Chinese noodles or spaghetti
Mix together sauce ingredients. This may be stored in refrigerator for several weeks. Cook pasta according to package directions. Drain, rinse to cool. Toss with 1 tablespoon sesame or peanut oil to keep moist. Refrigerate for at least 1 hour. Sauce may be added to whole bowl or spooned onto individual servings. Mix together and top with sliced scallions. Serve with chopsticks if desired.
