Seltzer, cranberry juice and OJ for non drinkers. As for cheese, get a few hard cheeses and a few softer ones. The cheese monger at your local store is your best bet for questions.

ever try making a cheese ball rolled in crushed pecans? that will set it off also, accent the taste of the wine....there is also a punch that you could serve for the non-wine drinkers, it's called "white sangria" you can make it without alcohol. It calls for a mixture of fruit juices and club soda or ginger ale....quite tasty w/ cedar cheese

For non-drinkers go with sparkling cider or grape juice. As for cheeses, I would use brie, smokey cheeses and really hearty ones because they will need to hold up their taste along side the acidic wines.

Go to your local wine store that specializes in wine and spirits, they should be able to help you decide on the cheeses.
As for the non-drinkers as myself, we do like sparkling juices, regular fruit juices and cocktails, club soda with lime or lemon wedges, and soda.

A wedge of blue cheese and crackers - very strong.
Cheddar - strong and expected.
Brie -s my favorite - cover it in sauteed mushrooms, garlic and fresh basil and wrap it in a crust made of crescent roll dough -bake it.
Now branch out into some surprises - soft bland cheese for sissys and something with a nice herb flavor.

There is no one booze that will please all. If you want to limit that I would use vodka - OJ and tonic on hand.

Feta cheese is a really good one. You also should serve ritz cracker for a little crunch. For non booze drinkers, serve cider or ginger ale.

I like smoked cheddar cheese. Get some good smoked sausage too with some really good crackers and all typed of mustards.
for the people who don't like wine..... maybe juices?
