I put everything you can imagine in a tortilla -- peanut butter and bananas to cream cheese and tomato slices. Kinda hard to go wrong as long as the fillings are reasonably compatible with each other on any other form of bread.

I love avocado with cheese and garlic salt inside a tortilla. Beans and rice with onions is great.

Cook a hamburger patty, cut in half. Place each half on a flour tortilla on melted cheese (while the burger is cooking, I place slices of Cheddar or Manchego on the tortilla and lightly heat on a Mexican "comal" (or fry pan) till cheese starts to melt.)
You can add lettuce, sauces, chilis, pickles, strips of bacon - whatever you like. My 12 year old calls it the "hamburger taco" and its delicious!

My ex had a strange mix of mustard/mayo/your choice of condiment, shredded cheddar cheese and french fried onions all rolled in a big flour tortilla.
Hey, to each her own. Doesn't make me love her any less... I just look at her funny while she eats.

I know I won't spell this right, but a chocolate, hazlenut quesadilla sounds pretty good! You could make it rocky road with marshmallows. Of course, my true favorite is very simple: pinto beans and cheese.

Even butter and salt. Blueberry jam and butter. Shrooms and cream cheese.

Fiesta Chicken Tortillas
2 cups (4 ounces) shredded romaine lettuce
1-1/2 cups (6 ounces) sweet tomatoes, halved
2/3 cups California Ripe Olives, quartered
1/2 cup (2 ounces) thinly sliced red onion
1/4 cup chopped cilantro
1 1/2 tablespoons lime juice
1/4 cup yellow cornmeal
2 tablespoons all purpose flour
1/2 teaspoon Kosher salt
dash cayenne pepper
1 pound boneless, skinless chicken thighs, cut into 2-inch strips
1 tablespoon canola oil
4 (9 inch) flour tortillas
1 cup (8 ounces) canned pinto beans, drained and pureed
In a large bowl, combine lettuce, tomatoes, California Ripe Olives, onions, cilantro and lime juice. Set aside. In a shallow bowl, combine cornmeal, flour, salt and cayenne. Toss chicken pieces in bowl until well coated, then shake to remove excess coating and transfer to a clean plate. Heat canola oil in a large non-stick sauté pan over medium heat. Add chicken, in batches if necessary and cook for 3-4 minutes, stirring occasionally until golden and cooked through. Remove from heat and set aside. Place tortillas on a clean surface. Spread 2-3 tablespoons of bean puree on each, leaving a 1/2-inch border around the edges. Place 3-4 ounces of chicken in a line down the center and top with approximately 1 cup of lettuce mixture. Fold edges inward and roll up burrito-style. Cut in half diagonally to serve, if desired. Serves 4.

Deep-Dish Tortilla Pie
1 pound ground beef, chicken or turkey
1 clove garlic, chopped
1 tsp fresh basil, chopped (or dried)
1/2 tsp. salt
1/8 tsp. pepper
1 can (12 oz.) diced tomatoes with juice
1 can (4 oz.) diced green chili peppers
1/2 cup California Ripe Olives, sliced
8 flour tortillas (8-inch size)
2 cups monterey jack cheese, grated
Heat oven to 375°. In non-stick frying pan, brown ground meat (or poultry) and drain off the fat. Add garlic and basil. Cook 2 minutes. Season with salt and pepper. In bowl, combine tomatoes, chiles and olives. Spray the pie pan or casserole dish with cooking oil. Then layer 2 tortillas, a third of the meat (or poultry) mixture, a third of the tomato mixture, and a third of the cheese. Repeat with the next 2 tortillas and so forth, ending with a layer of cheese. Bake for 20 minutes or until the cheese bubbles. Allow to rest 5 minutes. Cut into wedges and serve. Use a dollop of sour cream and sprinkle with green onions as an optional garnish. Offer the hot sauce all round. Optional garnish:chopped green onions, sour cream and green poblano hot sauce. Serves 4 to 6.

How about Tyson Pre-cooked grilled seasoned chicken beast strips.....in Southwestern or Italian flavor....heat for 1 minute in microwave oven in the packaging baggie
.....add in sauteed sliced mushrooms and onions...(3 minutes)
......add in some sauteed red and green, or yellow and orange bell peppers, cut into strips......(cook for another 3 minutes)
......top off mixture with bacon bits....
......serve with shredded colby-jack cheese....
Viola! In under 10 minutes, you can make chicken fajitas!
The leftover mixture reheats really well in the microwave at 70% power for one and a half minutes...
