The very best are hot house grown, seedless type, usually in a shrink wrap package. Look for firm and thick, no soft spots or wrinkling.
Next would be regular cucumbers, again, firm, dark green, no soft or wrinkly spots, peel, cut down center lengthwise, remove seeds using a pairing knife or melon ball-er...then slice using a knife or mandolin.
I like to sprinkle lots of salt on the slices and let them sit half an hour. This allows most of the water to come out, you drain this and then add your sour cream dressing....yummy!
