Because that wouldn't be scary. Vegan zombies aren't scary... "Oh No! The zombies are heading to the supermarket! They may eat all our produce!!!"

Because we're too busy protesting the cruelty of the world... :) I would think that since zombies are indiscriminately lusting after brains and blood in the first place, they'd rather chow on some idiot's head rather than stop at Whole Foods and wait in line for a head of lettuce or an artichoke heart.

It would make a bad movie. Carrots and tofu aren't afraid of the undead and if they were, they don't run very fast.
