What do vegans eat? Every fruit and vegetable, grain, legume and nut known to humankind.
Once you move away from focusing on meat, there is far more variety!
The only thing vegans have to worry about (other than people getting upset over their food choices!) is getting enough vitamin B12 which can be taken in non-animal supplements.
Don't dis salads!
A tossed salad can be much more than some iceberg lettuce and tomato slices. For a start, there are lots of different lettuces -- oak leaf, ruccola, lamb's ear, to name a few. Combine with green and red onion, spinach leaves, radishes, cucumber, cauliflower and broccoli flowerets, roasted pine nuts and a garlic, olive oil and lemon (or cider vinegar) dressing, and you have an entire meal in one bowl. Fresh veggies are also very filling, non-fattening (if you minimize the potatoes) and provide much-needed fiber to keep you "regular".
I'm not a vegan, just a "lapsed" vegetarian.

Vegans eat anything and everything outside of flesh, guts, and milk that does not belong to them.
Vegetables, fruits, beans, nuts, legumes, seeds (sunflower seeds, ect.), grains, tofu, soy, soups, cereals, cheeses (yes, there are ways of making vegan cheese without the use of milk and rennet), peanut butter, hummus, and meat alternatives (made with soy or tofu) are just a few examples of what vegans eat. I could also go on forever explaining every type of vegetable and fruit there are out there to eat (there are more than lettuce and bananas, despite what you may think).

You can't eat anything thats from an animal. Meaning, no dairy or even honey to some vegans. You are really restricted to what you can eat as a vegan, the vegans I know have to read the back of labels to make sure no animal fat is in there. I tried veganism for 2 weeks. It didn't work out for me. But for most, it does. One of my friends eats beans and rice. She gets a can of whole black beans (from trader joes) and some instant brown rice, cooks it together with some water and seasoning and she has herself a meal.

i'm not vegan, but a real vegan i'm sure has a creative mind on what to do with the items that they can eat. There are so many vegetables, grain, fruits out there, you can make pastries to famous "Raw" dishes. With all the spices and herbs in the world, it's endless. Exotic fruits, vegtables, and grains all around the world, different styles different flavors, soups, patties, things you dip your hands in, things to eat with chopsticks, things that are spicy or tangy. You have to step outside of the "box"... and get your mind going :)

Anything that doesn't come from an animal. Meaning, no meat, no milk, no honey, and so forth. Only plant material.
So salads, beans, soy, etc.
Come on - I'm an omnivore, and I get this. It's not exactly a hard concept.

There are thousands of products made for vegans, not to mention how many hundreds of recipe books are published for it every year. It's not a boring diet at all. There are all kinds of sweets, even. Most vegan foods (when they're prepared correctly) are extremely yummy. Heck, you can be a vegan even if you don't like vegetables. ;)

Whole grains, veggies, fruits, nuts, seeds, soy plus about 1 million other things. There are alot of foods that can be considered vegan and you dont even know it. My favorites are stir fry veggies over brown rice and pasta with chunky garden sauce.

Tons of vitamis such as calcium, vitamin b, nuts, soy (but not to much) the freshest lettuce you can get. It contains some calcuim in it.
